  • PUMPKIN!!! I am craving pumpkin!!

    Can you give me some pumpkin recipies?? Would love to find some legal recipies!!

    Easy.............

    1 Can of pumpkin (not pie mix)
    2 oz of soften (room temp) cream cheese
    1 Tablespoon of Splenda
    1 Teaspoon of Allspice or Cinammon or Pumpkin Pie Spice

    whip the cream cheese, add the pumpkin, add the splenda and spices and mix.

    Split it into 3 bowls, I count each bowl at about 3 carbs each (little high) but induction friendly....

    Only eat 1 every day or so, don't eat it everyday......

      What size can? My store has 2. One the size of a veggie can and the other, is bigger.

        It's the one that's the size of regular veggies. I think there are 3.5 1/2-cup servings in each can.

            Thanks guys! Today is my first day off 2 week induction and wanted something new to bump up my carbs. I'll celebrate tonight with this recipe!

                  If you are watching your cheese intake, you can do Scooter's recipe with just the pumpkin, Splenda, and cinnamon. Nuke it for a few minutes.

                  I have this for lunch frequently.
                  If buying the canned pumpkin, make sure it is the 100% pumpkin, not the sugary pumpkin pie filling.

                    Yeah, you've gotta be careful with this one, because it's easy to over-indulge, since it's low-carb. 2 cups, and it's no longer a low carb snack, you might as well have had a candybar.

                    Anyway, as long as you're being careful with it - I put coolwhip on top too - just like a pumkin pie.

                    That, and I don't always keep pumpkin on hand, so just last night, I mixed up
                    1/2 brick of cream cheese
                    1/2 cup of cool whip
                    some splenda, nutmeg, cinnamon, and pumpkin pie spice.

                    Sweet and delicious, but still workable.

                      but not 'legal' if the info I found on wikepedia is correct Unless there is a 'sugarfree' version out there?
                      Most Atkineers buy double cream (heavy cream) and whip it themselves to be able to control the ingredients.

                        Ummm, I'm not so much of an ingredient reader, than a carb reader. 2 tablespoons have 2 grams of carb in cool whip - cuz I'm a lazy bugger who won't whip my own heavy cream. Maybe that's where I get into trouble and could step it up a notch. I know cinnamon is also on the high side compared to other spices. But it is a snack that can tide me over without gaining weight.

                            Eliz, excellent point! But the sugar free cool whip won't help, because it has MORE CARBS (just less sugar) than the regular stuff! Evil!

                            Don't use cool whip! It's pretty much a frankenfood. It takes 5 minutes to whip heavy cream, and it tastes about a million times better. And you know EXACTLY what you're putting into your body. Reading ingredients is important. If an item's ingredients are NOT on the induction list, or legal for your rung, etc., don't eat it.
