  • What's For Dinner Tonight?????

    I'm on Pre-Maintenance, but here's what's Induction friendly on my menu tonight!

    Chicken cake
    Turnip Fries (recipe in the recipe section of the book!)
    Eggplant Fritters

    The chicken cake is based on a crab cake recipe: shred cooked chicken, mix with enough mayonnaise to just barely hold it together, salt and pepper to taste, form into patties and pan fry in oil or butter until golden brown on one side, flip and fry on the other. Don't consider flipping or moving the pattie until a good golden brown crust develops on the fried side, or else the pattie will fall apart (it will still be delicious though!). You can do the same thing using a can of very well drained tuna or drained and shredded canned salmon/mackeral.

    i am going to have Taliapia fried on a pan with vegetable oil.
    I will have a chocolate shake made with whey protein powder:
    1 scoop has 2.5 g Carbs
    1 gram of Dietary fiber.
    1.5 g of fat
    23 grams of protien

      most likely a steak salad from my fav mexican place.

      Carne asada steak, lettuce, cheese, some tomatoes, a little guac and salsa... yum!

              Baked Aubergine (eggplant) topped with pieces of cooked bacon and gouda cheese with some raw mushrooms on the side.

                At first..I had to think.. what in the world did I have for dinner..but I had a late lunch 3pm..I had Steak and Broccoli and then about 7 I had a Salad..

                    I had baked catfish with a salad and broccoli slaw. Yummy!

                        Grilled chicken wrapped in lettuce w/sliced tomatoes (forgot to put that in my ljournal list), mayo and grilled zucchini dipped in ranch dressing.

                        Okay, this one sounds like I can actually do! Thanks for the tip!

                          2 chicken breast, and some one carb bbq sauce

                            Tonight:

                            Lamb chops
                            Roasted curry cauliflower with sour cream---pre-heat the oven to 400 degrees F. Toss cauliflower florets with olive oil, salt and pepper to taste. Spread in one layer onto a shallow baking dish. Cook about 45 minutes, stirring occasionally, until the cauliflower is tender and has a golden brown tinge. Remove from the oven. Put cauliflower into a large mixing bowl, add about 1/4 to 1/2 teaspoon curry powder. Mix until well coated. Add just enough sour cream to lightly coat the cauliflower. If you don't like the curry flavor, you can leave the curry powder out or you can subsitute it with dill, garlic, lemon rind, rosemary, etc. Make extra because this is good cold the next day too!)

                              today is my DH Birthday! and my 1st day of Induction! so we are going out to The Outback Steakhouse for dinner and we are both having Steak, Salad and some Broccoli... NO Bread or Chips (fries) and Definitely NO Birthday Cake for ME later!!! (SF Jello is ok on Induction right? - I HOPE SO!) i played around with my eating yesterday just to kind of 'prepare' and it went very well... i think it will be Very Easy eating Atkins Style, because how can you EVER be Hungry or Irritable eating such Yummi Foods? thank goodness i have a few days off this week, so IF i get that nasty Induction Flu i will be home to suffer, not at work HAVING to smile when i wanna ... im sure ill be fine... ENJOY YOUR DINNER EVERYONE!
