You made a point of the 1/2lb weight gain in a day- thus the focus on reminding you that fluctuations are a fact of life.
The initial weight loss is water weight - on any way of eating- and a ketogenic way of eating typically increases the diuretic effect.
That doesn't mean you didn't lose any fat - it means that you have likely lost some fat but you're still retaining water. High sodium, fluctuations in hormonal cycles..all that jazz.
When we constantly subject our bodies to yo-yoing - it will be more resistant every time. It's not surprising that your body is being more resistant. It's something you can expect.
Hang in there and give it time. Your menus are looking fine- as noted above by several...push the water and eat the veggies.
