    Re: Breakfast ideas

I do ground beef crumbles, mixed with cheese, Taco Seasoning (check your brands and read the ingredients for hidden sugars).. and then sometimes shredded lettuce and a dollop of sour cream.

Same with chicken breast. I shred it up, toss on a sugar-free/acceptable Fajita seasoning and will eat a small bowl of that alongside my one cup of salad veggies.

The quiche sounds awesome. I would love to have the recipe for the Flaxseed muffins.

I love to have a cup or so of jicama for breakfast...I just like them plain because to me they kind of tastes like an apple. I like to take pre-cooked bacon to work because I can just throw it in the microwave and it tastes pretty good. I know that there is a pumpkin recipe on the recipe board that I imagine would be pretty good for breakfast, and sometimes I like to fry up slices of summer sausage until they're kind of crispy and then melt cheese on top...It's hard to come up with things that don't have eggs in them, but I hope this helps.

Years ago when I tried atkins, I honestly thought there was no variety to this diet and that it was totally unrealistic to think of sticking to it as a WOL...but now that I'm more experienced in the kitchen and know to come to a place like this for ideas, wow its never ending.

Whoa! I tried the recipe from Rachel for the No Bread French Toast for dinner last night...So, so yummy! And it is very filling. Thanks for the recipe share!
