Grated parmesan cheese is a favourite. Fry gently though as it colours easily. Some people mix it with ground pork rinds, but careful of the sodium levels.

Once you hit the nut rung of OWL you'll be able to use almond flour too.

Thanks Sallyseachange, for the ideas. I've been using nothing, just frying (or baking) plain meat. getting a little boring!!
Could I use the barbecue pork rinds?? I've been eating the plain ones, they are just that..... sooooo plain! lol

      Thanks again!!

You could use pork rinds....but they're kind of salty.

One thing I've learned to get to use to over the past year....let your meat go nekked with just seasoning.

pork rinds as suggested make a wonderful coating. My husband honestly can't tell the difference if anything he likes things better coated in them. I bought some jalapeno cheese pork rinds that were way too hot to eat by themselves (and I like hot food) so I was brave and coated chicken with them and make nuggets. Omg so good!

even a mixture of grated parmesan cheese and pork rinds is good. I like experimenting.

BBQ pork rinds have sugar and other illegal ingredients. I use plain pork rinds, but after I crush them in the food processor, I add paprika, garlic powder and chili powder and it tastes just like fried chicken loaded with carbs. You need to dip the chicken or pork pieces in an egg wash first to get the coating to stick. Be careful of seasonings that have sugar--most do. Read all the labels.

                Re: Coating for meat???

One coating variation for food that is going to be baked I discovered recently was to use mayo instead of beaten egg before rolling the food in grated parmesan. I dont know if it would work for frying though.
