I am asparagus'd out!!
Bf gets on these rolls where he can eat the same thing night after night. If I have the same thing more than twice in a week, I get sick at the sight of it...and this week it's asparagus!

I normally pan fry it in butter and olive oil, then sprinkle with s&p and grated parmesan.

How do you guys cook it?

(mind you, I blanched it, then put it in ice water, and served it with other veggies with a dip, and while I loved it, bf looked at it as though I had cut off the cat's leg and served it to him with a bowl of dip so not sure if he's up to another change..lol)

I cook them as you if they are the green type and fresh. I salt them with Maldon salt.
If they are white I boil them and have them with garlic mayo.

I saw a cooking show where the chef stuffed veal chops with asparagus, proscuito and fontina cheese. I had the asparagus, but I didn't have veal chops, proscuito and the fontina so I substituted chicken breasts, bacon and mozarrella. I grilled the stuffed chicken breasts in my George Foreman Grill. Fabulous.

:joy For dinner last night I made a shell-less taco salad. I browned hamburger added taco seasoning and then mixed with cheese. Once it was melted I scooped it over shredded lettuce and added salsa. It was delicious. For desert it was sugar free jello. I was surprisingly pleased with my dinner.

Be careful about sugar free jello. The sugar free Jello brand gelatin and some store brands contain aspartame, which Dr. Atkins told us to avoid because it causes weight loss difficulties in about 25% of people. Since the only way for you to know if aspartame causes you problems is to try it out, you might want to avoid it for the 14 day Induction, because this is an extremely important time in the diet.

Has anyone tried the white asparagus? I've seen it but haven't picked any up.

Last night we had fried chicken wings with frank's hot sauce & butter and then jicama with some cinnamon sprinkled on top. The jicama is so sweet right now!

My fabulous chef boy made thinly sliced veal, topped the veal with a mix of lobster and crab, then topped the seafood with 3 steamed asparagus spears (steaming retains so much flavor, try it Moochie) and topped the asparagus with homemade hollandaise sauce. I am truely spoiled!

                To DIE for!

Wondering how to get 'most' of your net carbs from your induction veggies?

These are great. Just with home-made mayonnaise

You may also cook a easy pudding (cold) or a cream (hot).

We had the meat crust pizza and gobbled it all up. It was yummy. Tonight we are having cornish hens with faux mashed potatoes and gravy. MMMMMMM

It was my first day back on my diet so my husband did it up right for me. He grilled a pork tenderloin and made sauted mushrooms in a buttercream terragon sauce. We had baby spinach salad with homemade parmesan ranch dressing and little jello cups for dessert. Tonight I am having deep fried chicken wings (no breading of course) with bluecheese dressing and more of the baby spinach salad. I am also making marshmallows with gelatin , egg whites and liquid splenda.

I LOVE Asparagus! I roast mine. I put the spears on a cookie sheet, drizzle with a little olive oil, garlic powder, salt and pepper. Put in the oven on 450 for a few minutes until they are tender but still crisp. You'll want to shake them a few times so they don't get stuck or burn on the bottom but the taste is WONDERFUL!
