Last night I made a casserole of my own creation!
Browned hamburger full of veggies (onions, zucchini, red and green peppers, celery, spinach), laid it out in a baking dish. Topped it with tomato sauce and mozza, went to put it in my oven, and my oven wouldn't come on!!!
Had to call poor bf and get him to pick up something on the way home.

It's not a breaker, it doesn't appear to be a fuse, and the manager will take care of it today so I don't really care what it is. (there's a rumour that they're replacing stoves in the building right now, so fingers crossed!!!)

So at least dinner for tonight is taken care of.

Tonight I'm having a fried catfish po'boy sandwich and turnip and celeriac (celery root) fries on the side.

I use Atkins Revolution Rolls for the "bread". The rolls are Induction Legal.

Tomorrow night I'm having a seafood chowder or a seafood soup (sort of like cioppino). Depends on how I feel like making it, but it will be a seafood soup of some sort! I haven't figured out the side dishes yet.

I use this recipe an almond pound cake and I don't add any sweetener or flavorings for the almond bread:

By the way, no nuts or seeds are allowed during the first 2 weeks of Induction and even after that time they are limited to 1 ounce daily (if you want to eat them that often).
