  • The Good, the Bad, and the Cheesy

    I am wrapping up week one of Induction, and while I do love my eggs, I was in the mood to try something new today. I made the Cauliflower Hashbrowns posted by Elizellen under "Never Ending Induction Recipes". Fantastic! They still have a cauliflower taste (I wasn't sure if they would based on all the reviews for cauliflower-based mock foods), but considering I don't typically think of vegetables at breakfast time, I was quite impressed. A keeper for sure.

    Next, I tried to make a taco shell out of cheddar cheese. I can't remember where I came across the recipe on this site so I tried following instrucitons from a Google search. It called for parchment paper which I didn't have so I went with wax paper despite the warnings. Should have heeded the warnings. All I created was a greasy mess. I wound up eating the warm, gooey cheese (yummy, but way over my cheese allowance for the day!) and resolved to try once more with the proper paper. Can anyone suggest what I should use to wrap the melted cheese around to get the best taco shell shape? Also, what is the overall diameter of the melted cheese? I may have made mine too large, making them harder to work with.

    I'm all "cooked" out this morning, but next I plan to give the Revolution Rolls a try. I haven't (yet) craved bread since beginning Atkins, but I would prefer to eat my double cheeseburger on a "roll" rather than plain -- it's just so much closer to the "real" thing.

    In retrospect, there really wasn't anything bad in this post. That's the beauty of this WOE I suppose -- it's all good.

    Here is the link to it. With pictures. Looks like they kinda of just fold it over after it starts to cool. Seems like you would definately use up your cheese allowance. There are 11 pages of posts though so could be more info in them.



    Glad you are finding the never ending recipe thread helpful!! I plan on trying the Revolution Rolls with a sloppy joe mix. That should be yummy as well.

      Thanks for adding the link Elsie150. I would say I am too lazy, but I've been cooking most of the day. My kids didn't know what to think as they have never seen me in the kitchen (except to eat), and I think my wife was surprised that I still remembered how to use a hand mixer!

      Contrary to my last post, I delved ahead with the Pepperoni Chips (another winner, although certainly a food one could overdose on!) followed by the Oopsie Rolls. Everyone, including the originator, claim they are better than the Revolution Rolls which is why I'm going straight to them. They are in the oven right now and look delectable. I'm already trying to decide if I want to take my first bite with a cheeseburger or as a base for a pizza. Yum!

      This board has provided a plethora of ideas and encouragement so far. Thanks to all!

        What a great thing! A man in the kitchen is a good thing. When he cooks...it's even better!

        I wanted to add that you can also shred/grate zucchinni much the same way as the cauliflower and fry it for breakfast. I personally like the zucchinni better than the cauliflower because of the taste difference...and it's just one more additional veggie to eat in the morning

          MMM...yes...the pepperoni chips. I haven't posted that one yet. I use portion control on those and I mic min for about 1 minute. Only 8 on a plate.

          Post the Oopsie rolls in the never ending recipe thread if you like them. I had a revolution roll open face chicken salad sandwich today...YUM! Oh the choices these open up. I really like these!

          BTW..I went a couple of pages deeper into the cheese taco thread....she says she uses just a bit over 1 ounce of finely shredded cheese. Happy cooking!

            Hey Eric,
            How did your Oopsies turn out? I made some yesterday for the first time and I added onion salt as suggested by some and they turned out way to salty. I will make them again without the salt, without anything but the cream cheese, egg and cream of tartar next time. However, I took a bite of one this morning and it tasted much better today. They're still a bit too "eggy" for me, but they will do when I need a bun
            I've been eyeballing the recipes for the Oopsie french toast, where you take them and put them in an egg mixture with vanilla, cinnamon, and splenda and cook 'em like real french toast. Then, you get to drizzle them with SF pancake syrup....sounds delicious. I have SF syrup and it reads at 11 g carb/serving so not for a while, besides, I'm trying to kick the sweet tooth.
            OH! and I read somewhere that if you stack 2 cooling racks you can hang the taco's upside down on the wire (so they dangle) and that will keep the shape.

              I haven't had the opportunity yet to make a burger or otherwise use the rolls in a meal yet, but I did take a nibble when they came out of the oven and can't wait for dinner! I used garlic (not garlic salt) instead of onion salt. I am a garlic fan and I think they are definitely garlicky. I would imagine any flavoring would work as I don't see how that ingredient affects anything other than taste.

              I also drooled over each of the pictures showing what could be done with the rolls! I'm trying to do Induction with no sugar substitutes so the French toast will have to wait awhile.

              Lisa's mention of zucchini has me wondering if there is a way to mix zucchini into the Oopsie Roll recipe to make some carb free zucchini bread? Too bad I don't have any zucchini in the house at the moment...

                        okay, you've talked me into it...i've been wanting to try the oopsie rolls, so i just printed out the recipe and think i'm gonna fix them tonight.

                        i also thought of an idea for sf syrup. probably not original, i'm sure sometime in my previous atkins journeys i saw this in a post, but here goes. i have some maple flavoring and thought about using some melted butter or atleast partially melted, and add the flavoring. that could be a substitute for the SF maple syrup.

                        gonna go start on those oopsie rolls now, i'll let ya know how they turn out.

                          You guys sold me on the 'Oopsie' rolls! I tried the Revolution Rolls 2 years ago, and didn't care for them. I am going to try these, they are in the oven right now. I will let you guys know how they turned out. Thank you!

                            I don't know so much about microbiology (embarassed as I did take this in college to become a nurse ) but....
                            I keep a couple oopsie's in a ziploc baggy in my purse (it's huge) along with a bottled water and hard boiled eggs in case of emergency, like if I'm out and can't get anything atkins friendly. That way I can just throw some chicken or roast beef, or even a burger in between and still be on point.
                            They're not fantastic, but what an innovative alternative. The texture is very much like a bun.

                              I tried the Oopsie rolls today. Definately less eggy tasting than the revolution rolls. Both still good! Oopsie rolls use up a bit more of your cheese allowance. From looking at the pictures would like to try them in the tortilla maker sometime. Thanks for also posting this in the never ending induction recipe thread! I know that lots of people are going to use from it!
