Induction Nachos
I used the following recipe (zucchini style). Check out some other recipes on her site- they're fantastic and there are plenty of induction friendly ones!
Make sure to squeeze the excess juice from the shredded zucchini. I also baked mine a bit longer since I didn't plan ahead for them to cool for so long. Try to squash the mixture down fairly thin with a fork before baking. I added lettuce, browned ground beef, cheese, and a touch of sour cream to mine. DBF and I loved them!
