    Re: Pork Skins

    Hi Wendy,

Welcome to Atkins! Best wishes on weight loss and improved health! I personally refrain from eating pork skins because they tend to increase my cravings for chips (my biggest vice), but a few of my friends on Atkins eat them occassionally and find nothing wrong with them. However, I have a suggestion: eat only what is on the approved foods list for your induction phase. Not only will it really jump start your body into ketosis, but it may also reduce or eliminate your cravings of salty snacks. Also, pork skins lack any nutritional value, so consider that if you eat them you won't be helping your body any. Although the first week can be a bit tough, if you hold strong to it and seek support, you'll get through it with increased confidence, an appetite toward better foods, and oh yeah... a new number on the scale!

    Congrats again!

I just made a plate of "nachos" with pork skins. Melted some cheese on them in the microwave and put a dollop of sour cream on top. Yuuum

Have you tried the salt n vinegar ones? Those can be addicting

              Re: Pork Skins

I haven't tried the salt and vinegar. I'll keep and eye out for them. Pork skins are really versatile.

Crushed, they make a great breading for frying chicken fingers or vegetables.

I also use them crushed on top of casseroles in place of Ritz crackers. You know us Southerners have to have a topping on everything.

I make the cauliflower casserole for all family get togethers or work get togethers and I crush the hot and spicy pork skins on them. Then I dump a cup of real butter on top of it. OMG.

People skip the mashed potatoes and gravy to eat my cauliflower casserole. My MIL was horrified to find out it had pork rinds in it. That's after she ate seconds. HeeHee.

                Re: Pork Skins

I try to steer clear of pork rinds mainly because of the sodium content, but they are a tie with pepperoni if I want a carb-free snack in a pinch. Be careful when dipping them in sour cream, especially if you are on Induction -- while thecombination is delicious, sour cream is a limited food during those first few weeks!

not to be the devils advocate, but isn't eating food like this sort of contributing to why we have junk food addictions in the first place?

If I did not have a few "Junk Food" to rely on I would not be able to stay on track. I tell myself when I am eating them that I am cheating. LOL

I don't think so as long as it is used in moderation. I run into trouble because of the sodium content but otherwise they aren't a big deal and keep me on track as well.. I could sooo be munching on a bag of doritos instead and that would put me off plan AND out of ketosis, make me sluggish etc.

                        Re: Pork Skins

Personally, I just consider pork rinds under the "meat" category and eat them liberally.

As far as the sodium, just drink another couple of glasses of water.

I had an assistant who would take the plain pork rinds and put SF peanut butter on them. She swore it was like eating peanut butter and crackers.
