  • Safe for induction???

    I found this recipe for Tex-Mex Quesadillas in the Atkins for Life Low-carb cookbook and was wondering if it was safe for induction. It says in the book it is but i'm not for sure.

    Salsa:
    3 ripe tomatoes, diced
    1 scallion
    1 tbsp chopped cilantro
    1 tbsp lime juice
    salt & pepper


    Quesadillas:
    1 pound boneless chicken breast
    1/4 tsp salt
    1/4 tsp chili powder
    1/4 tsp ground cumin
    1 tbsp olive oil
    4 (8in) low-carb tortillas
    8 ounces Monterey Jack cheese

    According to the Induction Rules in the 2002 ed of the book, low carb tortillas are not Induction friendly.

    The remaining ingredients, however, are. Be aware that the Induction limits for cheese is 3-4 ounces daily.

      Yup. I totally agree! Low-carb tortillas are a no-no, watch the cheese and the rest looks yummy!

        By the way, I'm pretty sure this will taste as good without the low carb tortillas. Just arrange the chicken on a oven proof dish, layer on the cheese and bake until the cheese is nice and melted.

          Or use pork rinds and make nachos out of it!!! Just be sure to drink a ton of water w/ that much salt consumption!

            Or wrap in lettuce leafs. Good listening to your inner voice and not checking on it AFTER you ate it! You are going to be so successful at this WOE!
