  • VOTW - Alfalfa Sprouts!

Alfalfa sprouts are those little fine feathery sprouts that you see in little containers in the produce section. They taste a lot like pea pods and sometimes they can even have a peppery taste.

    Tech Specs: 1 cup has 1 carb(4 carbs - 3 fiber = 1 net carb)
Nutritionally, they are a great source of beta carotene, Vitamins C, E, K, and are a good source of potassium as well, for all you folks out there with leg cramps!
(My info was found here http://www.elook.org/nutrition/vegetables/1849.html)

For those of you who are not keen on veggies, this is something you could easily mix in with tuna or chicken salad and hardly know it was there. :yes

I like to take a piece of deli roast beef, smear it with some cream cheese, put a layer of sprouts on it and roll it up...very tasty.

...and how do you like your alfalfa sprouts?!

I really like alfalfa sprouts but I don't buy them anymore. They are always recalling them because of salmonella (I think that is the bacteria) so I just don't bother with them now. I even used to request sandwiches without them when I used to eat sandwiches and I never ever take them on a salad bar! When I was in girl guides we grew our own sprouts in a jar but I can't remember how to do it.

Does anybody else have this phobia about this veggie???

I haven't worried about that because they've never done a recall anywhere that I've lived. I always rinse the portion I'm going to use before I eat it as well.
That's a concern to be aware of, for sure, and I'm glad you brought that up.

Here's a site to grow your own, if anybody is interested...it looks simple enough.

I agree with DizzyLizzy, there are a problem as they are difficult to wash. You can easily make your own but If you do buy the from a store, take a cap full of clorox to a gallon of water and rinse them completely.

The only thing that I ever use alfalfa sprouts in, is a salad that I make with thinly sliced deli meats, a couple cherry tomatoes, some emmenthal or havarti cheese, a thin slice of sweet onion, (Walla Wallas when I am home) sliced hot pepper, and sprouts. For the dressing I mix some sun dried tomato pesto with mayo and salt and pepper, The tomato pesto has pecans in it so that part is not induction friendly, mayo is just fine and so is oil and vinegar.

I eat it on sandwiches, especially yummy with avocado and chicken or turkey.

I'm not on the grain rung of OWL yet, so I still use the Induction friendly Atkins Revolution Rolls for my "bread".

Not crazy about em' but I love bean sprouts...theyre much larger and have a great crunch. I put a few on roll ups, in salads, the last few seconds of a stir fry...even plain or with a little blue Cheese dressing!

My birds love sprouts. I'm not to crazy about them, but sometimes if I have them on hand I'll throw some on a BLT (no bread.. wrap the bacon and tomato in a leaf of lettuce!) or chop some for a salad.

I used to love them on sandwiches pre-Atkins.
                    Haven't used them recently.

                    My fav sandwich was:

alfalfa sprouts, sliced tofu, Spike Seasoning, asparagus, lettuce (a good kind, not iceberg), and mayo. Now, using the Revolution rolls or microwave flax bread would be an option (of course, in my phase, even whole wheat bread would be an option - but for some reason I can't bring myself to eat it).

Worm burgers (although we usually use bean sprouts rather than alfalfa). Mix the sprouts in with the meat mixture, and add additional sprouts on the top when eating. The bean sprouts, especially, look like little works crawling out of the burger (my son's invention).

I love alfalfa sprouts! I'm so happy you posted about them lol.

I like them topped on my salad, they're perfect w/out anything special done to them. I have had them steamed and they were good, but I do like the raw fresh crunch.

My bf's brother and his wife and daughter came to visit a number of years ago, and the daugher was about 8 years old...sweet little girl. We all went out to lunch, and she ordered chicken fingers and fries. On the side was a slice of tomato, and a little puff of alfalfa sprouts. She'd never had them before and it was hilarious to see her expression!
She tried them, and loved them and bf and I were so proud of her to be so brave, when a lot of kids can be so particular.

I'm not a fan of alfalfa sprouts but I love sunflower sprouts which are bigger and have a crunch and daikon(radish)sprouts which have a spicy wasabi kick to them.

Thanks MoochieCat!! Great veggie topic! I'd forgotten all about them. My old favorite sandwich used to be avocado, sprouts, cheese (Mozz, cheddar, provolone), tomato, lettuce with a dab of mayo. Your thread inspired me and for supper tonite I had it with the lettuce (a big outer piece) as the bread and rolled the above in it!! YUMMY!!! Took up my whole cheese allowance for the day, but it was delicious! I think next time I'll cut my cheese in half and have 2.

I love them with sandwhiches. next time I get a chance I'll need to get some. I think itd be really good to have some bacon, sprouts, tomatoes, and cheese wrapped up in lettuce. Modified BLT
