I had the leftover shrimp last night, but re-made it as a shrimp salad. Tonight, I'm going to use this soup recipe: http://www.atkinsdietbulletinboard.c...up-my-way.html and add some leftover shredded pork to it. (It's cold and rainy here!)

Tonight - Chicken Alfredo with Broccoli. MMMMM!
I love this dish, it's really easy to make and my family LOVES it too!
I cut up and brown some bacon, onions and mushrooms (not a lot). Then I add the chicken breasts and sprinkle it with Italian seasoning and garlic. Once the chicken is browned I'll cover it in an alfredo sauce (about 3 carbs per serving) and cook on a lower heat until the chicken is done.
While my family puts some of the sauce over the fettucini noodles I make for them, I'll cover my broccoli. Scrumptious!!

And I love a leftover chicken for breakfast!

I know no one asked about lunch but I had taco salad with jalapeno peppers...It was fantastic!

Tonight I think I am baking chicken wings wrapped with bacon smothered in buffalo sauce (franks hot sauce and butter) then dipped in bleu cheese dressing.

i'm making this today, got it from linda's website, anyone tried it?:

                                HAMBURGER-BROCCOLI ALFREDO CASSEROLE
                                2 pounds ground beef
                                1 small onion, diced, 2 1/2 ounces
                                10 ounces frozen broccoli florets
                                8 ounces cream cheese
                                1/2 cup heavy cream
1/2 cup freshly grated parmesan cheese
                                1/2 teaspoon garlic powder
                                Salt and pepper, to taste
In a large skillet, brown the hamburger and onion, seasoning with salt and
pepper; drain fat. Meanwhile, cook the broccoli until tender-crisp; drain very
well and season with salt and pepper. Put the cream cheese in a microwaveable
bowl and microwave on HIGH about 45 seconds until soft. Whisk until creamy and
smooth. Gradually whisk in cream until smooth, then stir in parmesan cheese and
garlic powder. Mix hamburger and broccoli in a large, greased casserole (2 1/2
quarts or larger). Pour in cream sauce and mix well. Season to taste with salt
and pepper. Bake at 350ยบ for about 35-45 minutes, until bubbly and browned on
                                top.

This is a very nice, homey casserole. My husband gave it a thumbs up. Mushrooms
would be a nice addition, but count the additional carbs.
UPDATE: You can use a 16 ounce bag of frozen broccoli with very little change
in the carb count. I will also try baking this in a 9x13" baking dish next time
so that more of the surface can brown.
