  • *THE SAGA OF MAYONNAISE* CONT. SUGAR & CARB FREE

    Hi Folks! :wave

I see there's many of you who are having a real problem finding Mayo without sugar or corn syrup. Let me just tell you that making your own Mayo is about as complicated as boiling water.

Plus you can flavor it with lemon zest, garlic, Mustard, herbs...anything that's Atkins friendly and doesn't add carbs or sugar.

If you don't have a hand/stick blender, consider getting one it's a great tool to have and you'll use it all the time.

You can use a blender or food processor too. Here's the recipe

    What you need
    • *One Large Egg
      * I Cup Olive Oil
      *1/2 teaspoon salt
*1/2 Teaspoon Vinegar or Fresh Lemon Juice

    What To Do

(First everything must be room temperature or you'll end up with a soupy yucky consistency)
    • * Add Egg, Salt, Vinegar or lemon juice to a bowl
      * Start to blend on Slow
      * Very...very..slowley drizzle in the olive oil as you blend
      * Turn up to high when you can form solid peaks Viola! Mayonnaise!

You'll never buy store bought again - hope this helps

If you are in the US, Duke's Mayonnaise isn't made with sugar. It can be found in the SouthEast and it can also be mail-ordered from their website.

I was thinking more along the lines of free range Ice, or organic ice. I find when I buy Ice via mail order they keep shipping me water instead...oh if only I had the recipe!

Maybe its a missprint then, are you sure you are ticking the correct box in the catelogue!

I would be up in arms if I just recevied a box of water! I would be sure to be on the phone to the supplier.

That is just wrong! :raving :raving :raving

(btw, so sorry for hijacking this informative post)

and for those who don't like olive oil you can use any liguid oil you want to flavor your mayo, but olive oil gives you a highly monosaturated mayo which is better for lowering our LDL should you have an LDL problem. if you are concerened about raw eggs you can use pasterized eggs and there is a recipe in the data base for making mayo with boiling water too to kill any samonella that might be around.

                Happy low carbing.

Oh and if you can't find the sugar free and don't want to fix your own stuff milions of Atkins low carbers have survived and lost just fine on the 0 carb stuff with the sugar way down the list by counting it as a carb a serving.

                    Richt,

I've tried it all...to no avail. Back in the days when I ate carbs I had the exact same problem with white toast. I found diners very reluctant to share the recipe.

I bought I toaster and decided to wing it on my own, talk about complicated? I couln't figure this thing out for the life of me, and the tech support wasn't helpful at all.

I suppose you had the same problem when you were making yourself backed beans on toast? You put the beans in the toaster too?!

                          Richt,

Of course I put the beans in the toaster...who wouldnt? I was also smart enough to operate the toaster in shower, in this way any crumbs would simply go down the drain and I wouldn't have be bothered with messy clean up.

Except for the sparks and that pesky feeling of electrocution it worked quite well.
