      what is a corgette?
      I'm a father of twin daughters, whose main goal in life is to set a positive example for them.

      1st Goal.... 299... Met on Feb. 3rd, 2009
      2nd goal... hopefully 275 by May 15th, 2009
      Ultimate goal 180 by sometime in 2010.

            So, you can totally do this with radishes. The radishes completely lose their taste and it is very potato-y. You can get them crispy. mmhm.

              What a great idea. I hate radishes but if they lose there taste and the hash browns end up potato-y it's worth a go. Thanks.

                  I thought that I would post the amount of cauliflower I use for anyone that hasn't tried this. I would relate the taste of these to potato pancakes instead of hash browns.
                  You can omit the egg and they will come out crispier and more hash brown-like.
                  Cauliflower pancakes:
                  I take half of a head of cauliflower and remove the outer leaves. It is fine to use the core when you blend/grate all of this up.
                  I cut the cauliflower into smaller pieces and throw it into my food processor (or grate).
                  Blend this into tiny bits.
                  Take a bowl and scramble an egg - I use extra large eggs.
                  Combine the cauliflower bits and eggs.
                  I add red pepper flakes and onion powder and mix it all together.
                  Get a pan on medium heat and add a bit of olive oil. I have tried to use butter but I like the results better with olive oil.
                  Put 2-3 tablespoons of the mixture into the pan and flatten. You should be able to get 3 patties into your fry pan.
                  Let them cook for about 2 minutes..they will get nice and brown.
                  Flip them very carefully. The smaller they are the easier they are to flip.
                  Cook for another minute or two on this side.
                  I wrap them in foil on a plate while I cook the rest of the mixture.
                  It's a taste sensation.

                      i am so addicted to these things now. i just use cauliflower and egg, but reading this i may try w/o the egg and add parmesan. the funny thing is i normally HATE cauliflower, but made this way it's great! also...please don't think i'm a freak, but...i was eating it one night and thought it almost tasted sweet, so another night i added a little heavy cream and splenda into the mixture, then topped them with butter and a little more splenda, and i could swear they were like pancakes... the cauliflower just takes whatever flavor you give it, i guess, haha.

                        That is a great idea! I've had sweet potato pancakes. The sweetness coming from sugar, not from sweet potatoes.

                          gaffe, I tried your cauliflower "potato pancakes" tonight so we would have "potatoes" to go with our steaks.

                          They were wonderful! Even DH liked them, and he's not on Atkins!
