  • what do you usually take to work for snacks/lunch?

Ok - so I'm sure if I searched, I'd find these answers - but as of right now - today - this week - what are you taking for snack and lunch to work?...

I have a sit-down (sedentary ) job that I actually absolutely LOVE - however sitting down at my computer all day can physically be hard as far as well - i think about food (along with work, lol) all day.

I found some absolutely FABULOUS sugar free sweet gherkins (1 carb for 2 gherkins) that I brought with me today and had 4 of those total with some cream cheese and turkey (unfortunately the turkey we have at home as 2 g carbs per 7 slices and my fiance won't let me throw the package away because we don't like wasting food)...but once that turkey is gone, i HAVE bought some salami (0 g carbs).

    4 gherkins = 2 g carbs
    7 slices turkey = 2 g carbs
    3 tbsp cream cheese = 3 g carbs

My snack was VERY yummy but it WAS 7 g carbs for the snack, and I'd prefer not to do that...and yeah - i know i shouldn't have had so much cream cheese, but it's what i brought with me.

SO ANYWAYS - what are you guys eating for snacks this week?

i'm looking for things that can be packed in my lunch box with a frozen ice pack to keep it cold.

also - my lunch, today, consists of:
    1 can tuna = 0 g carbs
    mayo = 0 g carbs
    2 whole boiled eggs = 1 g carbs
1 stalk of celery, chopped & 2 tbsp red onion, chopped = 1 g carbs
(all mixed in a tuna/egg salad)

but i know i'm gonna get bored with that if i do that too often.

so i'd REALLY like to hear what you guys are eating this week! thanks!!

Re: what do you usually take to work for snacks/lunch?

Hi. I think I should point out that the menu carbless_in_seattle posted is not induction.

Anyway. I usually eat a greek yogurt at work for breakfast (I am a desk jockey too) with a packet of splenda mixed in, and I keep some cubed jarlsberg cheese in the fridge here at work... it's delicious with mustard.

I have also been known to keep string cheese, turkey pepperoni, beef bologna, pumpkin and cream cheese (mix these with a packet of splenda and microwave for about 1.5min for a tasty pumpkin cheesecake thing), smoked salmon with cream cheese and cucumber.. Yeah.. i think those are my normal snacks.

It is canned pumpkin... I am not on induction, so I'm not sure and my book is at home... I think it might be on the "other veggies" list but I'm not positive and don't want to be saying something's okay when it's not.

Maybe someone else has a book handy?

You're right, it's on the "other veggies" list.

ok, so it's something i'll have to look foward to.
I'm only on week 2 of induction and I honestly think I will go into extended induction for my third week - as I'm still also trying to find time to read through all of the book!

that, and - I really think my body needs that 3rd week - but we'll see next sunday if i still feel like i need a third week of induction or not.

Re: what do you usually take to work for snacks/lunch?

                    Pumpkin is allowed on induction...

Veggies from the first list you're allowed 2-3 cups of per day. From the "other veggies" list (where the pumpkin is), you can have 1 cup if you had 2 cups from the first list. If you have 3 cups from the first list, then you can't have the 1 cup from the second list.

                    Does that make sense?

Re: what do you usually take to work for snacks/lunch?

Hmm. I'm not a big lettuce fan (sorry Georgiana - I know you're reading this)... one thing to keep in mind if you're eating that as most of your veggies on induction is that when you move up a rung (to the veggie rung), you are adding 5g of net carbs to what your previous average was.

So, if I were eating 3c of lettuce everyday, and it has something like, 1g net c/cup... I would be eating my daily veggie amount, but only 3g net carbs from veggies. So even if I had my 4oz of cheese (4g net carbs), and 2 splendas (2g carbs), I'm now at 9g net carbs, right? Let's say I ate this for 2 weeks (induction). When I move to the first rung, I should be adding 5g of net carbs to that, which would now put me at 14g net carbs. NOT the 25g net carbs that would be the max had I been keeping my carbs closer to 20 on induction.

Perhaps I am making this much more complicated than it needs to be. While I can appreciate lettuce (seriously, I can appreciate it), it's good to have variety and try to eat the other veggies more frequently.

Remember, Dr Atkins said we should have 'most' of our carbs from our veggies, so if you choose lettuce at only a few carbs for your 3 cups on induction you do not have many 'allowed' carbs for eggs, cheese, sweetener, mayo!!
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!

I buy a london broil every weekend and make beef jerky. I use just hot sauce, liquid smoke, salt, garlic and fresh pepper to season it. I slice it into strips and dehydrate it. One 3 lb london broil makes enough to snack on and share. It takes no time at all for this snack that can go anywhere. Making it yourself is better because most store bought jerky has a fair amount of sugar. Mine is carb free.

tfek70--could you elaborate on how you make the jerky? Do you use a food dehydrator? I have a food dehydrator and it supposedly can be used to make jerky but I've never tried it. Guess I won't be drying so much fruit anymore! Could you share how it's done (do you marinate the meat, what proportions, how thick do you slice it, how long do you dry it, temp, etc.?). Have you ever tried making it with anything besides beef (e.g. turkey)? Thanks!
