I do what you describe or just visualize that the individual slices of cheese I have for snacks are 1oz each and try to get that amount.
With Smarie's suggestion, if the block is 16oz, make a mark at halfway. That's 8oz and 8oz. Then, half that for 4 and 4. Keep going and you'll have 1oz pieces.
When I started induction I used to divide my block of cheese into smaller pieces so I knew easily how much was in each piece. If the block was 8 ounces I would first halve it then half those again so I had 4 x 2 ounce chunks which I could wrap separately for instant portion control.
