    MMMMmmmmushrooms!

    Soaking up any flavours they are exposed to, mushrooms are delicious in stir fries, sauteed in garlic and butter, cooked in a casserole and great dipped in ranch or blue cheese dressing..very versatile!
    One cup has 3 carbs, and 1 fiber, for a net carb count of 2.
    A good source of riboflavin and niacin (not that I'm sure what those two do for us, but hey...it all counts!!)

    This is another veggie that you can sneak into your diet in various ways but remember to measure them before you cook them, as they do cook down quite a lot.

    I like to chop up mushrooms, garlic and celery very finely and saute them in butter. I'll add some herbs like sage and thyme...stuffing flavoured herbs, and when it's all cooked down really well, I'll spread this on chicken breasts that I've pounded thin, roll them up and secure them with a toothpick. Roll in parmesan cheese and bake for 45 mins or so at 350.
    Yummm!!!

    Or after the saute, you can add some heavy cream and parmesan (or your favourite cheese) to make a cream sauce..also very nice!

    I know there are lots of ways to enjoy mushrooms! What's yours?

    YAY, mushrooms, my favorite!
    I LOVE to broil or grill a huge portabello cap with butter and garlic. It makes an excellent substitute if you are sick of meat, meat, and more meat. I can't wait until the 9th rung of OWL when I can have a portabello burger....mushroom, swiss cheese, roasted red peppers, spinach, romaine, and aeoli on a whole wheat bun. DROOL!! Too bad being a vegetarian made me fat!
    I also like them fried with some bacon and served with my eggs in the morning.

      I eat mushrooms nearly every day with breakfast. Sometimes I use leftover chicken and mix it with mushrooms and have that for breakfast with some cheese on it ... other times I saute mushrooms and scramble and egg or two with them and some salt and pepper. It's a great way to start the day with veggies and it's an easy veggie with which to start!

        Mushrooms!

        Yumm...

        I Take big Portabella mushroom caps and slice em thin, sauté in olive oil, lots of garlic, course salt and ground pepper. When they get a little crisp to the edges I add a stick of butter and grated Parmesan cheese, toss, finish with heavy cream...it's wonderful, by itself and especially poured over a big juicy steak!

          I love mushrooms too. I like making kabobs with a mixture of different mushrooms and red peppers then marinate them overnight in olive oil, garlic, lots of fresh ground pepper and a splash of lemon juice, then grill them. Mushroom fritatta's are yummy too, or just simply sautee'd in better. Oh, not to mention homemade cream of mushroom soup! Mmmmmmmmmushrooms.

            I looove Mushrooms, some raw or all cooked. A mixture of different mushrooms sliced/chopped, saute in unsalted Butter with fresh Garlic sprinkled with white salt and black pepper with plenty of hotsauce and a nice piece of garlic lamb is the best!!

                Crab Stuffed Mushrooms

                1 1/2 pounds (about 24) white mushrooms
                4 green onions, chopped
                3 cloves garlic, minced
                1 tablespoon fresh basil, chopped
                1/4 cup fresh cilantro, chopped
                1 fresh green chile, seeded and finely chopped
                1 pound crab meat, shelled and flaked
                1/2 teaspoon Dijon mustard
                1 tablespoon ground red pepper
                6 ounces quality white cheddar cheese, grated

                Wipe the mushrooms clean with a damp paper towel and remove the stems. Place the mushroom caps on a shallow baking dish. Mince the stems. Combine all the remaining ingredients, including the minced stems, and mix well. Spoon the mixture into the mushroom caps and bake in a preheated 350° oven for 15 minutes. Serve warm. Makes about 24 appetizers.

                  MY FAVORITE WAY!

                  My favorite way is...

                  Sautee all of the following in butter-veg oil blend:
                  Shrimp
                  Mushrooms
                  broccoli
                  Onion
                  Green Peppers

                  Then Season with Lawry's seasoned salt, onion powder, and black pepper!

                    Another thing I do with mushrooms is add them to my soup. I'll heat up a can of chicken broth (or homemade if you have it) and chop up some veggies...whatever you like! Onion, garlic, broccoli, cauliflower, minced fresh ginger, spinach or kale and sliced mushrooms..throw them in and cook till tender. Sometimes I'll just slice up the ginger, skin and all, and remove the slices afterwards. It's a great soup for when you're sick :yes
                    and like I said, the mushrooms absorb the flavours around them, so yummmm!

                      I love mushrooms! They are the best! I love having them in my salads or grilled and piled on to some chicken mmmm

                      I have a potluck at work coming up and I'll be bringing some stuffed mushrooms, found an induction friendly recipe and I'm looking forward to it. Plus this way I'll know I'll have at least one thing I can eat!

                        I absolutely adore mushrooms and nurselady turned me on to the 100s of wild muchrooms that grow in our area. If your interested in mushroom hunting check out mushroom clubs in your area as that is how to learn which ones are poisonous. Otherwise check out the farmers markets in your area for oysters and morels and the list goes on and on. You can even grow your own now.
                        I saute them in butter and garlic.
                        I posted a great mushroom soup recipe in the cookbook.

                            I have a little different way to eat mine but I take out the steams and pour my dressing inside of the mushroom hole and dunck the stem into the dressing and then eat the rest of the mushroom..maybe I am lazy for not cooking them but they sure are a good snack!!

                              I didn't eat a fresh mushroom until I was in my teens! Mom and Dad would never have bought them fresh because they were one of those 'expensive' things...you know, like buying grapes in the wintertime....it just wasn't done in our family! I grew up on canned mushrooms and loved them so much I'd open a can, drain it, and eat them right out of the can....all tinny tasting and everything...lol

                              I usually only eat them fresh now, but I always have a can or two in the pantry because they're great to throw into things.
