Everlosing, just realized I had missed one of your questions:
They should have some "give" in them when you gently press them with your hand. You may have to experiment until you know what you are feeling for. You will know, once you cut them open, if you misjudged. They should be soft and creamy (not too firm or hard) without brown spots inside.
And yes, I cut them in half, leave the pit in one half, drizzle the surface with lemon juice, then wrap it in saran wrap and refrigerate it.
Have you tried them yet?
My favorite way to eat them is chopped up in taco salad. I also love guacamole as a dip.

I forgot to ask what I should be "feeling" for when I pick some up!! If we can have 1/2 avocado per day, are you able to preserve the other half in the fridge for the next day if you drizzle a little lemon juice on it and put it in the fridge??
