    Maybe you can try a new veggies once a month -- I've noticed since I started Atkins my tastebuds have changed and now things I didn't think I liked or had never tried (and said I didn't like) are actually things I crave now.

    Try cutting up radishes with cut up green onion and frying them -- it's a great fried potato substitute. Creamed turnips are good mashed potato substitite.

    Don't tell yourself you don't like them or you'll gag if you have to eat them -- try something new. I'm re-trying jimaca after trying them earlier in my Atkins journey - I didn't really know what to do with it but I've seen what a few others are doing so I decided to try it again - this time fried like a french fry.....

Spread the remaining cheese over the top. Beat the eggs in a small bowl and whisk in the mayonnaise and cream. Pour the custard mixture evenly over the cheese. Bake at 350ยบ for 30-35 minutes until nicely browned. Let stand 10 minutes before cutting.
      Makes 8 servings
      Can be frozen


      I made this recipe last night. My husband and I thought it was incredibly yummy! Does anyone know how many calories and carbs are in it?

        This is what I got when I put in in Nutrition Data Nutrition facts, calories in food, labels, nutritional information and analysis – NutritionData.com

        Remember, I used the numbers from my brand of tomato sauce, etc, so your counts may be a bit different.

        FOR 1/8 recipe
        Calories - 354
        Total Fat - 27g
        Saturated Fat - 12g
        Trans Fat - 1g
        Cholesterol - 134mg
        Sodium - 640mg
        Total Carbs - 9g
        Dietary Fibre - 1g
        Protein - 20g

              Not quite...Mine has no zucchini in it. I'm not sure where I got the one I showed above, but it is the one I've used since starting Atkins (I think I had this for the first time my second or third week...)

                  I have found that cauliflower cooked like potatoes or rice and Jicama cooked like apples or potatoes have really helped me...which reminds me...I need more Jicama!!! I just love it cubed and fried like hashbrowns in the morning with my bacon on the side and maybe an egg! Yum!!

                    I like those, too, Sonya. I have been trying variations of spaghetti squash lately as well since it is such a great sub for pasta. This weekend I cooked a couple of those and put a cup of the resulting "pasta" in each of six microwave dishes. Then I made Linda's Creamy Alfredo Sauce and put a sixth of that in each of those dishes. I put those in the refrigerator and stored the remainder of that "pasta" there, too. That combo of the squash "pasta" and that sauce is just wonderful.

                      i really should try new vegetable recipes but one that i have always used was this its Rung 2 btw cause of the feta cheese

                      fresh broccoli if you dont like to much fiber in your diet cut it really close to the top flower part the stems are what have most of the fiber i think

                      then just fry it in a frying pan with unsalted butter for 2 mins with a lid on it then take the lid off flip the broccoli and add feta cheese to it then 1-2 more mins with the lid on to melt the feta and then its ready

                      if you want it to be very dry tasteing only cook with a normal amount of unsalted butter but if you want it to be very moist and tasty (the way i like it) cook with lots of unsalted butter the broccoli really absorbs the butter while it cooks

                        I also hate almost ALL veggy's and salads. As much as anyone says try this or try that. I just don't like it. And really why force yourself to eat something you absolutely hate? About all I eat is green beans, and maybe broccoli... But not much else. And even tho someone will probably yell at me for not following the program to a T. I have lost 10 pounds in the first 13 days. Probably not as much as I would have if I filled up on green stuff. But I did lose. So I would suggest just eat the veggy's you like. and be happy. But I do like to read the suggestions..because I did find out I liked black olives stuffed with cream cheese... that's a nice treat for me.

                          I used to hate them as a kid, I believe due to the fact of becoming desensitized by eating sugary foods all the time. Your taste buds need a chance to adapt and you will acquire a taste for them. I absolutely love vegetables!!!

                          In the meantime, try topping vegetables with cheese or Mrs Dash seasoning.

                            I ate 4 grilled asparagus yesterday. It would have been 5 but one jumped off the grate of the grill and caught fire. Aww shucks. I was momentarily tempted to mass murder them all but resisted. This stuff is rather nasty IMO but tolerable if you chew it while eating a piece of filet mignon. Maybe it is not nasty but it is not good either. I bought a bunch of them so I have committed to eating 4 a day until they are gone but that is all I can promise.

                            Also ate snow peas which did not make me gag so I will add those regularly.

                            But I shant, no way in heck, ever eat broccoli and you can't make me.

                              I was never a big vegetable person, either. You have to get creative with your veggies, else they taste like... veggies. For example, I roast squash with olive oil and butter (with garlic powder, onion powder, salt, pepper, etc.) then top it with grated parmesan. It's awesome. Also, sauteing green beans with olive oil, garlic, and bacon is delicious. Don't think you just have to eat veggies raw or steamed.
