Maybe you can try a new veggies once a month -- I've noticed since I started Atkins my tastebuds have changed and now things I didn't think I liked or had never tried (and said I didn't like) are actually things I crave now.
Try cutting up radishes with cut up green onion and frying them -- it's a great fried potato substitute. Creamed turnips are good mashed potato substitite.
Don't tell yourself you don't like them or you'll gag if you have to eat them -- try something new. I'm re-trying jimaca after trying them earlier in my Atkins journey - I didn't really know what to do with it but I've seen what a few others are doing so I decided to try it again - this time fried like a french fry.....
