Ok, this might sound gross, but I need some advice--

down here in the south we have bagged fried pork skins. We call them cracklins. Anyhow, they seem pretty gross, and they are if you eat them plain. But, a coworker whose done Atkins told me to grind them up in the food process to make it like breadcrumbs. Then, dunk some chicken breast in egg, then in the "pork skin crumbs" and fry in a pan. Like chicken fried chicken!

What do you all think? OK ON INDUCTION???

it's fine -- many of us eat them that way -- or eat them dunked in ranch dressing....just watch the sodium in them -- if you eat too much you may retain water. What I'm saying is, a few for breading or as a snack are fine, a half or 3/4 of a bag at 1 sitting....TOO much!!!

    Good luck

Be aware that pork rinds are relatively high in sodium. Sodium might cause water retention which will be reflected as no weight loss (or perhaps as a weight gain) on the scale. So be mindful of them. Also be aware that some pork rinds are doctored with dextrose. So read the ingredients.

Thanks for the tip! Good point. I'm okay on the salt because here's my thought--I've already lost 5 lbs this week and I've had no salt restrictions. Is it true that even if I do gain fluid weight or show that I've not lost (becuase of fluid retention) that I am still losing lbs? (hope that question make sense)....

Yes you still lose fat regardless of how much water your body holds...

Ranch dressing is allowed on induction.

You can have any dressing with 2 carb per serving or less -- so Ranch is allowed.

Pork rinds are great like that and also warmed up with some cream, cinnamon and sweetner. I LOVE the latter

BTW use the unsalted ones. You don't have to worry about sodium that way and it won't interfere with the flavor or taste.

I've never had pork rinds...don't know if they even sell them around here. Would they be in the potato chip aisle?

I'm curious to see what they look like. I guess I'm envisioning those pig ears that are sold as chews for dogs and that kind of grosses me out.

                        Re: fried pork skins/rind

mizski, yes, pork rinds are found in the section with all the various kinds of chips, at least around here.

Interesting to see this topic tonight. Although I knew one could use the rinds for breading, I just hadn't had the yen to do that until tonight. I bought both some cod and some salmon for that purpose and tried the cod tonight.

I used to love fish (cod, halibut, salmon) and chips, but they did not like me. Too fattening, of course, but they always made me feel terribly bloated. So I dipped tonight's cod in egg and pulverized pork rinds and deep fried them. I had jicama fries with them for the chips and a small bowl of lemon juice and another of tartar sauce (made with mayo with some chopped dill pickle and chopped onion). Wonderful meal.

It seemed absolutely sinful. I kept waiting for the bloating to hit and it never did. No wonder we don't call Atkins a diet.

                          What are Jicama fries?

If you have a mexican store in your area they would be more likely to have the unsalted ones.

mizski - they are puffy and very crunchy. I didn't like them at first, but now I do. I make a dip out of cottage cheese [not induction] and ranch.
