I don't like veggies. Just canned green beans and lettuce. I'm on day 8. down 6 pounds. I've been eating a lot of eggs and chicken and cheddar cheese. I try to have a chicken ceasar salad once a day but again this is just lettuce. So far it's working....I guess. Can I take a viatmin for a veggie replacement?

Re: I hate veggies. Can I do this without them?
Dr. Atkins wrote in the book that most of our daily carbs are to come from vegetables. So you really can't do without them if you do Atkins.Originally posted by Goingtodoit View PostI don't like veggies. Just canned green beans and lettuce. I'm on day 8. down 6 pounds. Vitamins are only supplements, not replacements for vegetables.
There are about 20 veggies on the "salad" list and about 30 veggies on the "other" list. Would you be willing try out a new veggie every day? When I was a vegan, I discovered that vegetables that aren't prepared properly do not taste good. So try these veggies in different preparations: raw, lightly steamed, sauteed, etc. You might find something you like.

Re: I hate veggies. Can I do this without them?
Of course you can do without them if you choose, but that will not be very healthy for you, and that is not Atkins WOE.
"It" may be working for you now, but for how long and how good is it for you is a different story. And how long can you eat that way?
Please check out the veggies available and the recipes links below. There are a lot of ways to prepare and disguise them and you may even learn to like them.. I have totally turned my attitude around toward veggies myself.
Check out "Jicama". I slice it, dry it off on a paper towel a bit. Then slice it into thin little pieces, fry in butter until "almost burned", then sprinkle with cinnamon. You would never know it was an allowed veggie.
Please give it a little better try so you can be successful, and hope this helps!

Re: I hate veggies. Can I do this without them?
Well, you can do whatever you want. But if you want to follow Atkins the way this board does, you'll have to get the majority of your net carbs from veggies.
* climbs upon her soapbox *
I'm a little touchy about this subject. So many people attack the Atkins WOE as unhealthy. Nothing could be further from the truth! The Atkins eating plan emphasizes the benefits of protein and natural fats - AND nutrient-rich carbohydrates. There is a difference in the quality of carbs. The crux of the matter is in limiting carbohydrates and in selecting the right carbohydrates, those most full of nutrients and fiber and those with the lowest impact on your blood sugar. So, not only is it important to choose foods with low carb counts, it is also crucial to select the most nutrient-dense carbohydrate foods. The goal is to eat as many "good" carbohydrates as your body can tolerate without interfering with weight loss or getting your blood sugar out of whack. And you will choose healthy, satisfying whole foods, ones that provide nutrients and fiber. Vegetables, in general, contain "good" carbohydrates, although some are very high in carbs and not as high in nutrient value, and some are the reverse. Most vegetables provide fiber and many healthy phytonutrients (phyto means "plant"), those magical substances found in plants that help us ward off disease. Fortunately, the vegetables that are most dense in nutrients happen also to be those lowest in carbs.
About veggies
- Before Atkins, I wouldn't touch a veggie with a 10 foot pole.
And on that 1st attempt at Atkins, I did not put forth the effort to break out of my box and make myself try new veggies. I got to where I was eating a lot of nuts and dairy, but not eating many veggies. I think that is the #1 reason why I fizzled out on that attempt. Atkins really is a change of lifestyle... it's not trying to eat as closely as you can to how you used to eat. So on this attempt, I tried tons of new veggies. I can't believe how much better the plan works when you eat veggies! Unbelievable!!
So, as a former veggie-hater, I can tell you that it's no excuse to avoid them. It's time to open your mind, do some experimenting, and change your life.
Best wishes to you!

Ok then. If I can't do this without eating green things then could you share the "sweetest" recipes? Mission To Lose, what is Jicama? I've never heard of it?
BTW, I'm not filling up on other carbs just eating maybe 3 carbs a day from cheese, mayo, and dressing.

That's good! However, that type of eating is not sustainable for life. Believe me when I tell you - Maintenance is harder than losing the weight. It is so very important for you to be developing skills and strategies to learn how to eat this way for life.Originally posted by Goingtodoit View PostBTW, I'm not filling up on other carbs just eating maybe 3 carbs a day from cheese, mayo, and dressing.
I head up a boardwide Veggie Challenge twice a year, and there is lots of discussion and sharing of recipes in that thread. When you find the time, spend some time in the thread for the latest one: http://www.atkinsdietbulletinboard.c...challenge.html
Believe me, I feel your pain about thinking you don't like veggies. I was there. But I know you can do this! You just haven't tried them the right way, yet.

Re: I hate veggies. Can I do this without them?
Hey! Me, again
You need to try this! I used to think that I hated cauliflower. I absolutely LOVE it! And there are so many ways to prepare it. Here is one of my favorites:
From Linda's website:
Linda's Low Carb Menus & Recipes
"LOADED" CAULIFLOWER
1 cup cooked cauliflower
1 teaspoon butter
Salt and pepper, to taste
1 ounce cheddar cheese, shredded
1 tablespoon ranch dressing or sour cream
1 strip bacon, crumbled
1 teaspoon chives
Butter and season the cauliflower. Place in an individual-serving baking dish, then top with the cheese. Microwave or broil until the cheese is melted. Top with ranch dressing, bacon and chives.
Makes 1 serving
Do not freeze
Per Serving: 290 Calories; 25g Fat; 12g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs
I wasn't trying to pretend that this was a baked potato, but I had the idea of topping cauliflower with all of the things that go on a baked potato. It was quite good.

All of the comments are hers, as is the Nutrition info. I would encourage everyone to come up with their own counts, rather than rely upon someone else's. It's not that I don't trust Linda... I just think it's a better idea to verify the info on your own. I recently made a recipe new to me (not from Linda's site) that proved to be quite different from the counts that were provided.
I use sour cream on mine... have never tried it with the ranch option. This recipe really is yummy!

Well I can't really explain what Jicama is as well as if you "google it" and check it out. You can find out a lot more doing that, then what I could tell you here... And a lot of vegetables are not "GREEN THINGS". Jicama is white inside.

Re: I hate veggies. Can I do this without them?
Out of all the ones I have tried, I only like potato's and corn. Both of which aren't allowed. I am doing this 'sans the veggies as well. I have gone 24 years without eating them, I doubt it will make enough difference now. I am however taking multi-vitamins and suppliments to make sure I just don't keel over and die.Originally posted by rollyPolly View PostHow can you hate all veggie?? I'll bet you haven't tried all of them, lol. Ilove mashed rutabagas/turnips with butter salt & pepper even when not 'dieting'.

Re: I hate veggies. Can I do this without them?
jicama = jícama = yam bean = Mexican yam bean = ahipa = saa got = Chinese potato (this name also is used for arrow root) = Mexican potato = Chinese turnip (this name also is used for lo bok) Pronunciation: HIH-kuh-ma Equivalents: One jicama, cubed = 2 cups Notes: This tan-skinned tuber has a mild, nondescript flavor, but a nice crunchy texture. It's a good, cheap substitute for water chestnuts in stir-fries. Since it doesn't discolor, it's also a great vegetable to serve raw on a crudité platter. Peel it before using.
Jicama is a staple for me. I find them to taste a bit like a cross between a mild apple and a pear. It varies... sometimes they're pretty bland. Although the ones I've gotten this week have been AWESOME! So sweet. I eat it raw 99.9% of the time. I have panfried it in butter and added a bit of splenda and cinnamon. It was good, but I like using chayote for that now.
Check out that veggie challenge link, everybody. Lots of great stuff in there. And I'm going to come looking for y'all when the next one rolls around in May.
