      As I indicated earlier, people will do whatever they please. However, this is a support board for 2002 DANDR, and when members inquire about how to do the plan correctly, we are bound to giving advice based upon that.

      It's too bad that you haven't persisted until you found something you like. I have a pretty low carb level for maintaining, and I am so very grateful to be able to add veggies for taste and health. I can eat lots of them, and still stay at a relatively low carb level. I find it hard to believe that a person couldn't find at least a few that they liked.

        Linda's Low Carb Menus & Recipes

        I wasn't trying to pretend that this was a baked potato, but I had the idea of topping cauliflower with all of the things that go on a baked potato. It was quite good.

        All of the comments are hers, as is the Nutrition info. I would encourage everyone to come up with their own counts, rather than rely upon someone else's. It's not that I don't trust Linda... I just think it's a better idea to verify the info on your own. I recently made a recipe new to me (not from Linda's site) that proved to be quite different from the counts that were provided.

        I use sour cream on mine... have never tried it with the ranch option. This recipe really is yummy!

        I do this with cauliflower too and I use sour cream. AWESOME stuff!!

          Andrew! I know what you mean! I haven't eaten a veggie in 45 years. I don't drink and I quit smoking 4/19/94. I'm still healthy according to my doctor and bloodwork.

          Mitzi, The cauliflower looks good but does it stink to high heaven when it's cooked? I could never get past the smell. I will try to Jicama. I promise.

            Let me add also that iceburg lettuce had virtually O nutritional value. Have you tried more nutrient-rich greens for your salads? Only 3 grams of carbs a day? I know it's hard, but like others have said, it is imperative to follow the correct WOE to get to goal and maintain. It my work for a while not eating veggies, but you will pay for it with lack of nutrients eventually. Fortunately I love nearly ALL veggies, so it's easy for me to "talk." Lol

              I had never heard of jicama before starting Atkins. I can usually find mine at Walmart. Although, my local Walmart suddenly stopped having it a few months ago, and I was sad. But they got a fresh crop in last week, and they are outstanding!

              They are a pain in the butt to peel, but I have gotten better with practice. The skin is a pain to get off. But well worth it! It's got a lot of fiber, and I am a fiber freak. I have to admit, though... the first time I tasted it, I thought it tasted a little root-y... kinda like dirt. However, once I had it a few more times, I acquired a taste for it and have it just about everyday.

              I like to use this for panfrying in butter with splenda and cinnamon:

              chayote = cho-cho = chocho = christophene = christophine = chuchu = mango squash = mirliton (in the South) = pear squash = vegetable pear = sousous = choko = custard marrow = pepinella = pepinello = xuxu = xoxo Pronunciation: chi-YOH-tay or chi-YOH-tee Notes: This mild-flavored squash looks like a wrinkled, pale green pear. It needs to be cooked before serving, and for a longer time than other summer squash. You should peel a chayote before cooking it, but don't take the seed out--it's edible and tasty. Cooked chayotes make good low-fat substitutes for avocados.

              They take a long time to cook, but are really very good.

                It's funny you say that.... my son absolutely turns into a little when I cook certain vegetables. Little terd! It's not like I make him eat them. But he throws a fit when he has to smell them.

                OK, look. Does cauliflower, broccoli, cabbage, brussel sprouts, and asparagus stink when you cook them? Yes. But it's just something you need to learn to put up with. They definitely taste better than they smell.

                  I'm glad to hear they taste better than they smell. I like sauerkraut and that stinks but tastes good. My son won't eat that and complains about the smell. He's never had the privilage to smell cauliflower cooking.

                    Another veggie hater here, but I'm determined to do better. If you own a food processor, I have something right up your alley. When I make induction chili, I puree the green pepper and other peppers and add them to chicken stock. I also threw in a zucchini this time. After you puree them and cook them in chicken stock, they are more like a roux and you can't even tell they are in there. I use the same strategy with the slow cooker jambalya recipe that is floating around here. In addition to the cauliflower I added a zucchini in that too. There are all kinds of ways to hide them. I would eventually like to get over my fear of all things green, but for now, this is a compromise. I am certain that my lack of veggies is a contibuting factor to past failures. I also purchased a jicama the other day. It is still daring me to eat it.

                            Do you see that pizza? The crust of that pizza is largely veggies!

                            If you want to see what disguised vegetables can do, please check my blog for so many examples! This particular pizza is a cauliflower pizza crust. It's the "Cowboy" pizza.


                            See this? All veggies again. the pizza and the bread sticks are made from cauliflower!



                            This beauty is a tostada with a shell made with--are you ready--zucchini! Yet it is crisp and holds a hand filled with spiced taco meat and more.
