I seem to have a hard time getting enough calories, and I need help!
I didn't get to put yesterday's food into FitDay until today. Even though I ate eggs, pork, meatballs (induction safe from Linda's site!), a little cream and cheese on my broccoli, I still didn't break 1200 calories for the day!!!
It's so hard to get motivated to make food when I'm NOT hungry, and I'm busy chasing a 10-month-old all day.
I usually have a batch of Linda's Korean meatballs (minus the sauce - we don't use artificial sweeteners in this house) in the fridge for a quick snack. I also keep a couple packets of cooked salmon around, mix some with a little cream cheese and dip pepper slices in it. Yum!
Does anyone have any suggestions for some easy snacks to keep convenient? I already know that hardboiled eggs count... but for some reason, I can't stomach them lately. I'll make a deviled egg whenever I'm in the mood, but I need something else.
Now here's something to make it difficult: I hate, hate, hate mayo (with a few minor exceptions). I can't do tuna salad, egg salad, etc. Bleeecchh.
Oh! Does anyone have a mini-quiche recipe? I love quiche, and that could be a quick and easy snack.

If you need to count them because you are used to counting calories, then go ahead. But if you listen to your bod, you probably will hit the "right" number daily.
When I follow the 6 hour rule, I am better able to control my food intake (that is, not over-eat.)
