Plain broiled chicken livers are (IMO) incredibly boring which is maybe why you used gravy? Try frying them with bacon or in butter or even braise them with butter and mushrooms (makes it's own wonderful "gravy" that is great on mashed califlower).

I also make a spicy chicken livers tapas where you coat the chicken livers with a mixture of 1/2 tsp. each of cumin, ground cilantro, paprika & 1/4 tsp. of nutmeg. Fry in olive, coconut or grapeseed oil about 3-5 minutes until crisp on the outside but still tender inside.

Remember not to overcook chicken livers.

Re: Chicken livers? Yes or No?

We used to make them about once a year, we fried up tons of onions and butter and then threw in the chicken livers, and cooked until they were done.

Like Mizski said don't over cook.

        Thanks! Makes sense now.

My mind was stuck on the livers.

What "Introduction" are you referring to?

You need to read the book. It's Dr. Atkins' New Diet Revolution (2002).
I wasn't talking about induction..I meant I need to go on and create an Introduction of my self. Im going to asap. Im a full time student and single mom so time is limited. Yes, I have read the book. I just find so many things contradictory. Yes, you can eat all the cheese you want as long as there are no carbs, no you can't...i have 4 cheeses...no carbs, no sugars (although I know the carbs are what counts) and then I read well don't eat more than this many ozs...just confusing. I'm not a HUGE meat eater. I like chicken better and then I read well, it's the fat you're supposed to consume...so eat fatty meats. Just trying to figure it all out.

Did you read the 2002 edition or a previous one?

The limit for cheese is clearly stated in DANDR 2002: 3-4 oz per day.

Go by what the book says, not by what you've read wherever. The book has accurate information.

I'm not a HUGE meat eater.
You don't need to be, so that should not be an issue.

I like chicken better and then I read well, it's the fat you're supposed to consume...so eat fatty meats.
You can eat chicken and add some fat to it. Like a sauce... or even plain mayonnaise.

Re: Chicken livers? Yes or No?

Thanks for the introduction. Nice to meet you (I almost wrote meat you - maybe I have been doing this too long )
Do you have the right book? My book says cheese is limited and we count one carb per ounce. But it is yummy.

Re: Chicken livers? Yes or No?

Thanks. Yes DANDR is the one I've read and continue to read because it's a lot of info. It is the 2002 edition. i have been looking at it again because it has been awhile..I thought most veggies like lettuce, celery, cabbage, and mushrooms were pretty much 0 carbs..I was sadly mistaken, huh? Like i said before I was on this diet a few yrs ago and lost 30 lbs. and Im sure I can do it again but I just don't recall it being so much meat. I mean if ya don't eat a lot, there's not a lot left with just 20 carbs. I suppose it works so well because you can hardly eat anything! Eggs, eggs, eggs.boy you can start getting sick at the thought of an egg easily. i did cook something last night that was incredible. a med portabella mushroom..it had 4 carbs but 3 fibers (so is that 1 carb or 4?). I smothered it in olive oil and fresh garlic (another thing I thought had no carbs or a trace from the atkins just carb counter book I have). I put 4 chopped grape tomatoes in the middle and mozzarella chees and baked it for 10 minutes. It actually tasyed like pizza. Im just so confused with all of the diff books I have (all Atkins) that say diff things. Thanks for your advice. That is me between diet, 16 hours of school, single Mom and trying to get off this dreadful med called Lexapro!

I'm not sure how you define "pretty much 0 carbs"... but they definitely don't have zero net carbs.

That's not a bad thing though. Atkins is not a zero carb diet... and there's no reason to undereat your net carbs during Induction.

Plus, veggies come packed with fiber, vitamins, minerals and other nutrients... so they are good for your overall health. One of the aims of this way of eating is not only to help you control your weight, but also to be healthy... and that starts in Induction.

I mean if ya don't eat a lot, there's not a lot left with just 20 carbs.
You can have chicken, fish, shellfish, eggs, cheese, half an avocado...

I suppose it works so well because you can hardly eat anything!
Ummm... if you reread DANDR, you will understand why it works so well. You're not supposed to be undereating.

And if you think Induction is restrictive, you should move to OWL on day 15 and add more variety to your menu.

Eggs, eggs, eggs.boy you can start getting sick at the thought of an egg easily.
You don't need to eat "eggs, eggs, eggs". I eat 2-3 per day... and I also have days when I eat no eggs.

i did cook something last night that was incredible. a med portabella mushroom..it had 4 carbs but 3 fibers (so is that 1 carb or 4?). Good for you!

Check out other recipes, too. Linda's website is a good resource.
