  • Veggie question from a veggie hater

    There are very few veggies that I like and they are all not allowed except lettuce.

    Last time I did Atkins I did it with nothing but iceburg but this time around I'm trying to get my carbs from veggies.

    I have been eating romaine. Today I went to the store and picked up some baby spinach and a mixed bag of frozen broccoli, cauliflower, and carrots. Which has a net carb of 3 per serving but I plan on skipping the carrots. I really no not like broccoli or cauliflower but I find I can suffer though them with enough seasoning.

    Also I add garlic to a lot of what I make.

    So the question is, is that good enough or do I need to find more veggies?

    Tonight for example I made a side salad with romaine and baby spinach to go with my pork cutlets. Tomorrow will probably be a side of the broccoli and cauliflower.

    baby steps will get you there. Very few folk loved the legal veggies before they started. You will be amazed at how your likes change with time.

    Try hiding your veggies too like shred some in a meat loaf. or roast them and make a dipping sauce for your protein.

    Do you like pizza sauce or spaghetti sauce? if so you can make induction legal that with your tomatoes, mushrooms, onions, and peppers, garlic and herbs and eat your veggies that way.

    if you liked potatoes in your pot roasts you can try adding radishes. they lose the hotness with cooking and don't get mushy neither. You can make faux tatter salad with them too.

      The short answer is ... it's not good enough and you need to find more vegetables.

      It will be very difficult going through life eating so few vegetables.

        That is a wonderful start. Way to go working it.
        A sauce is a great idea -
        How about a "pizza" with a grilled portabello mushroom bottom a burger with tomato and lettuce and pickles? It does great under the grill and is very quick to cook up

          Try making cheese sauce to put over your veggies, or putting butter on them...it makes them much more enjoyable Congrats on expanding your veggie horizons!

            Have you tried jicama? How about pumpkin? There are lots of great recipes on the board. Linda's site has a great chayote squash recipe that tastes a lot like fried apples.

              I'm like you. Hate veggies. So I got to the point of using tomato paste. Put some spices in it, mix with some cheddar and put on top of my food. Getting about 8-9 carbs a day from veggies a day that way. Not ideal, but better then nothing like I was getting before.

              Gave pumpkin a try, the smell made me want to hurl and the taste did make me hurl.

                  2big knows me too well. She remembers how much she had to thump me on the head back in 2004 to eat vegetables. I decided to do what any veggie disliker who needed to appease her friends would do: I hid my veggies in my food. I still was able to follow the tenets of Atkins, but I didn't have small shrubs of broccoli mocking me.

                  Find creative ways to implement vegetables during the day in the least offensive manner and you'll generally find yourself appreciating them more and more!

                    Shrubs of brocolli smothered in a rich cheese sauce are tasty
                    My recipe is easy-peasy
                    Rich Cheese sauce (2 servings)
                    Ingredients
                    1 ounce cream cheese
                    2 fluid ounces double cream (heavy cream)
                    4 ounces grated strong flavoured cheese

                    Method 1
                    Put all the ingredients in a bowl and microwave for 1/2 a minute at a time, stirring every 1/2 minute till melted together

                    Method 2
                    Put all the ingredients into a small pan and heat on a medium setting stirring till melted together.
                    You can make only half the recipe if you think you might be tempted to overdo the cheese and eat it all at once .
                    If left in the fridge overnight it turns into a sort of 'cheese butter' and can be sliced to top more brocolli shrubs!

                        Personally, I like to imagine myself as a Godzilla-like Monster eating giant trees as I stomp my way through downtown Tokyo, squashing cars and knocking down buildings with my big Godzilla-like tail. Afterall, I would need the broccoli nutrients in order to fight Mothra and Ultraman.

                        My can of Hunt's Tomato Paste lists total carb 6 grams and fiber 2 grams for a serving size of 2 tablespoons (33g).

                        Tomato paste is made by boiling whole tomatoes (minus the skins and seeds) until it has reduced to a paste. It is essentially concentrated tomato. Per the values in the USDA Nutrient Database, approximately 200 grams of a red, ripe, raw tomato has the equivalent carb and fiber amounts as that 2 tablespoons of Hunt's tomato paste.

                          Rather boring to get all your daily vegetable fiber needs from tomato paste.

                            Since you mentioned tomato paste... did you try Cleo's recipe for cauliflower pizza? You could use some tomato paste on that, too.

                              I am a veggie lover, but my husband was NOT until I got ahold of him.

                              Honestly, the best first step is to say to yourself, "OK, if so many people love these darn things so much, they can't be THAT bad, right?" If you bring a forkful of veggie to your mouth expecting it to taste awful, it just might - because that will be what your brain tells you!

                              Try to start with a clean slate. In my husband's case, he had been fed nothing but canned veggies his entire childhood (blech!!!!!), so it made sense that he had such an aversion. The same thing can happen if you've frequently been served mushy/overcooked veggies!

                              Try some of the sweeter ones first - broccoli, cauliflower, string beans, etc. Steam them until they're as tender as you want them to be (poke with a fork - it's all up to your preference!) and give 'em a try.

                              If you don't like the taste, then smother the heck out of 'em with cheese sauce or butter! Butter is what I used to get my hubby to start eating veggies in the first place. If they were drowned in melted butter, he would tolerate them.

                              Eventually, I slowly stopped using butter at all! Now, he LOVES broccoli, brussel sprouts, green beans, peas (not allowed on induction!), peppers, etc.

                              I made a fabulous stir-fry today with bok choy (VERY mild, sweet flavor - it's basically chinese cabbage), mushrooms, garlic, a little bit of soy sauce and red pepper flakes. The veggies were good, but the sauce was oh-so-yummy! It made me want to lick the bowl!

                              Oh, and another thing... cauliflower... My husband HATES cauliflower. He despises it. He gets upset when I bring it home from the store, even if I buy it just for myself.

                              Well, a couple days ago, I tried my own version of the cauliflower mashed "faux"tatoes. I cooked some cauliflower and mashed it with a potato masher, then I added butter, cream cheese and shredded cheddar. He LOOOOVED it!

                              If you don't like naked veggies, there are lots of ways to prepare them so that they barely even taste like veggies. Challenge yourself to try two new veggies every week! Look up some recipes or ask for suggestions here!
