    It might be boring to you, but it might not be boring to AndrewH---and he's the one who counts because it's his tastebuds.

    Honestly, the best first step is to say to yourself, "OK, if so many people love these darn things so much, they can't be THAT bad, right?" If you bring a forkful of veggie to your mouth expecting it to taste awful, it just might - because that will be what your brain tells you!

    Try to start with a clean slate. In my husband's case, he had been fed nothing but canned veggies his entire childhood (blech!!!!!), so it made sense that he had such an aversion. The same thing can happen if you've frequently been served mushy/overcooked veggies!
    I agree with you Bekki. I used to be a vegan (don't look at me like that! lol ) And I found that veggies I did not like as a child or as a young adult, were the veggies that were not properly prepared! But when I had these veggies, properly prepared, they were delicious.

      Thanks all. I picked up some cream cheese and heavy cream at the store the other day so I think I'll make that cheese sauce. Thanks for the recipe I was actually going to search for one today because I didn't know how to do with without a roux.

      I also picked up some no sugar added tomato sauce and ketchup, so I guess I'm getting a little more veggie that way, thanks Reagan!

      I'll slowly try new things and see what I can tolerate. I will never eat mushrooms though, I don't even care how magical it may be.

        Just take it slowly and try different preparations/recipes. You need to have an open mind about it. And don't forget to use things like herbs and spices on your veggies because they perk up flavor too.

        Out of curiosity...did you eat any kind of veggie pre-Atkins (potatoes are a veggie. )? If so what were they?

            Lettuce, potatoes, corn, peas and tomatoes but only as a sauce, chunks of tomatoes I can't stomach.


            I'm going to rice some cauliflower but I'm going to have to do it by hand with a knife. From what I have read I believe you just chop it up while its frozen then cook it without water. Is that correct?

              do you have a box grater? riced califlower is grated fresh cauliflower. very thin and very small pieces. You could do the faux taters cauliflower since you have cream and cream cheese with your frozen cauilflower.

                Maybe to you, but seeing as prior to that I never ate veggies at all... And with spicing it up it is like a spaghetti sauce.

                  I did the pizza crust today. It was pretty good and I did it wrong. Skipped a step, didn't precook them. Sadly no grater or food processor so I had to do it all with a knife.

                  Between the cauliflower and tomato sauce it was the best way yet to get a full serving of veg.

                        good for you do you like chili? if so you can use tomatoes and onions and peppers in it for your veggies.

                        Have you tried Cleo's cauliflower noodles with your sauce or even some spaghetti squash? all induction legal veggies.

                          I've tried the cauliflower (attempted to make the pizza). Did not like it. Have't tried spaghetti squash yet tho.

                              Try mashing the cauliflower: it makes a good mashed potato substitute.
