    Re: flaxseed 1 minute muffin

I bet it would make good french toast-- although it seems redundant soaking egg in egg!

On a variation, I just made the flax pancakes for Brunch today. For my taste buds, OH MY were they good.

      You're welcome!

If the radishes have nice leaves, you can use them to make pesto... that would also go with the chips, I guess.

This is the recipe I use:

Pesto – been there, done that? Wait! delicious:days

Instead of serving it on crostini, as the author of the recipe suggests, I serve it on flax crackers.

        Re: flaxseed 1 minute muffin

These sound great. I really want to try this recipe. But, for some reason, I am reluctant! I know it's just flax meal, and it's induction friendly, but it's stil kind-of a 'flour' and the thought of this scares me. I am so afraid of gaining back weight from those carbs.

Ok ... got it off my chest. I'll try and bring myself to make some tonight - or not.

            Re: flaxseed 1 minute muffin

Question. I get my flax seed from the bulk food store, and I have seen it at the health food store as well. In neither case was it refridgerated or sealed. Just in bulk bins. Is it only after grinding that it can go rancid, or should my seeds be frozen until I am ready to use them?

Thanks for all the great ideas. I am thinking pancakes.

I keep my whole seeds in an airtight container on the shelf and so far have not had any problem with them going off. I buy them in 5 kg (11 pound) bags so it takes a long time to use tem up, and am nearly at the bottom of the container and the ones I ground up yesterday seemed fine and the ground flax (linseed in UK) smelt and tasted fresh.
Wondering how to get 'most' of your net carbs from your induction veggies?

Thanks for the clarification, it saved me from having to do research.

The pancakes sound yummy.... do you put anything besides butter on them? What about sugarfree syrup? Maybe not during my extended induction, but something to look forward to?

I think it's hard to beat butter.

S/f syrup is just a bunch of chemicals and sugar alcohols. I could never actually bring myself to put that "junk" on my wonderful pancakes!

I spread mine with pumpkinbutter which gets a veggie in that pancake meal too.
I add one can pumpkin to one box of cream cheese and 3T of pumpkin pie spice and nuke iot about one min to soften the cream cheese and release the aromatics in the spices. You can cook on top of the stoive but then you lose some of the yummy stuff to the sides of the pan. besure to figure the carbs for what you add as your spices and if you add sweetner

                        Re: flaxseed 1 minute muffin

Pancakes over here in UK are usually made thinner (like crepes) and traditionally are sprinkled with sugar and lemon juice then rolled up.

So perhaps your thicker US-style pancakes might be OK with just granulated sweetener and lemon juice or with lemon juice sweetened with liquid sucralose?

Lately, I have been making this because it tastes so great and because its so versatile!

Flax Bread Recipe - Low-Carb Focaccia-Style Flax Bread

It's basically a flatbread or focaccia-style flax bread and its .7gms carbs per serving and the recipe makes 12 pieces. I was surprised how yummy it was and it was very good for a breakfast sandwich in the morning! It baked up nicely and it was very easy. Not sure if it's induction friendly or not but I am guess it is...
