Yeah... that was a long time ago. I don't do that anymore. But I had to try.

Just thought of something else, regarding flax. I've found that I like the taste of golden flaxseed meal better than the regular flaxseed meal. I don't even really know what the difference is between the two, but I do like golden better.

Also, many people really prefer these made with golden flax meal. It supposedly has a much more delicate flavor.

After eight months I have still never tried a MIM. In the beginning I really really wanted to break away from bread-like things (bread was a HUGE problem food for me). Now I am used to not having bread. Still, I need to make a couple of these (figuring the first one might be a flop) to know what everyone is talking about.

when you get to OWL you could use a chocolate whey protein powder to make then choclate tasting.

Polarbearking your post appears after kjel copied Elizellen recipe and hers uses 2T water. did you use the other recipe?

not sugaring your berries first would work better cause when you sugar them they are moving water out of their cells to equal the sugar pressure gradiant on the outside of them

I already prewarned my family I was bringing these to Easter brunch! I'm glad I learned about the muffin/cupcake pans... and the freezer idea.

You want ground flax meal not seeds unless you don't mind grinding up the seeds yourself.

I recommend the golden flax meal if you see it.

btw, i have looked all around for this flax meal and can't find it anywhere. All i find are flax seeds and oil! Is this an american thing or what? Help me out! Lol
You might try a health food store ... they should even have the golden.

Walmart, Zehrs and Super Stores should have the regular.

Radishes make a great potatoe chip alternative. I don't know about the BBQ part though. I know they make a BBQ saesoning, but I don't know what's in it. I also am careful with my salt intake because it slows down my weight loss (can't have that now, can we? LOL).

I want to vouch for these muffins. They are amazing-- They're mostly egg but the texture is like bread and they don't even taste especially eggy. They really do seem like a bread.

I made one today. I made mine with olive oil and was a little heavy on the cinnamon. I also went heavy with butter all over it. It was really good. I am going to make french toast out of it next time.

I bet it would make good french toast-- although it seems redundant soaking egg in egg!

I can't think of these as "muffins". I call them "Egg Puff". My husband and son think they are disgusting so as I was eating a toasted one this morning I kept saying "Mmmm, Egg Puff" just to bug them. Heh heh.

Other than radishes, you can also make crispy chips using thin slices of eggplant.

                              Here's a recipe for radishes:

                              Crispy Baked Radish Chips Recipe

You would do the same with eggplant.

Be careful though... they burn easily.
