  • flaxseed 1 minute muffin

    I saw somewhere the recipe for these... they sounded good so I bought some flaxseed today.

    Are these muffins allowed during induction? I'm thinking not... but I thought I'd ask anyway.

    Could you pass on the recipe if you know it.... for future reference.

    Yes, they are allowed on Induction.

    This is the recipe I use:

    Muffin in a Minute

    Serving Size: 1

    1/4 cup flax meal (8.09 total carbs, 7.6 fiber) (30 g)
    1/2 teaspoon baking powder (0.64 net carbs)
    1 packet splenda packet (0.9 net carbs)
    1 teaspoon cinnamon (1.84 total carbs, 1.2 fiber)
    1 large egg (0.6 net carbs)
    1 teaspoon butter

    (total carbs is 12.07, fiber is 8.8; net carbs is 3.27)

    Put the dry ingredients in a coffee mug.

    Stir.

    Then add the egg and the butter. Mix.

    Microwave 1 minute (or more). Take out. slice, butter, eat.

    Cream cheese would go nicely, too.

    The shape of this can be changed by making it in a bowl.

    It can be "toasted" once it's cooked.

    The cinnamon can be replaced.

    Keep your flax in the freezer or refrigerator ... the oils in it can go rancid. Also, make sure you drink an extra 8 ounces of water if you're eating flax.

    More than one of these per day probably isn't a good idea!

      WOw... thanks! I'm definatley going to try this tomorrow for breakfast. Might keep me regular!

        Remember to drink an EXTRA 8 ounces (at least) of water if you're having flax.

          Heed this advice! If you don't drink enough water, you will get the opposite thing going... it makes a rather effective plug.

            oh! Good to know!

            I'm drinking plenty of water though. (32oz x 4= today).

            I think that's plenty?!?!

              If you have flax, you need an EXTRA 8 ounces, regardless of how much you're already drinking.

                I think I will give this a try also. Will have to go get some flax meal first.

                  I make mine a little differently to Atkinsgal's version, as I use mine as a bread.

                  1 tablespoon melted coconut oil
                  2 tablespoon cold water
                  1 large egg
                  1/4 cup ground linseed (flax)
                  1/2 teaspoon baking powder

                  I put mine in a 3-4" wide microwave dish and cook it for about 3 minutes.

                  I sometimes slice it into teeny slices and make mini finger-sandwiches or horizontally cut in 3 rounds and toast one on both sides then butter to pop a poached egg on.

                  One whole one split and toasted makes a very substantial burger bun!

                    elizellen: Coconut oil huh? I'm not sure I've seen it in the stores. I've heard of it, just haven't bought it. I'll have to look for it. Is there a different oil I could substitute? That might be nice to bring to the numerous Easter brunches we need to attend. My grandmother always makes turkey breast & ham for sandwiches... If I brought this "bread" I could have a sandwich also! Can it be made in advance?

                      any fat will do to match the fatty acid chain length in the cocomut you might try butter. coconut fats add coconut flavor to a food.


                      also those who are trying flax forthe first time be aware that the flax food will add weight as it absorbs that fluid in your gut and moves along until it exits so if you are a scalenumberphobic do not weigh the day after you eat your first falx muffin.

                        btw, i have looked all around for this flax meal and can't find it anywhere. All i find are flax seeds and oil! Is this an american thing or what? Help me out! Lol

                          you can buy a cheap electric coffee grinder and grind your seeds to make meal. that is what many folk do cause once you have ground yourown you will never go back to the preground stuff. the antioxidents and vits and oils in the flax can stay fresher longer in the seed forms too.

                              I'm a scalenumberphobic! I weigh several times a day. I'm trying to get away from that though... especially since I actually gained ONE pound over night! So, thanks for the forewarning!

                              I made one this morning... and it was delicious! A LOT like bread! Yummo!
