Check this out: You don't have to make them into 6 pieces, I either make 1 large one, or 2 pieces to fit 1 cookie sheet.

You could also try some atkins friendly eggnog. It's a nice change and tastes great.

        2-3 eggs
        1 cup heavy cream
1-2 packs of splenda (depending on your taste/tolerance to it)
        1 teaspoon vanilla extract
1/4 cup water OR 2-3 ice cubes

Blend the eggs first then add the cream, vanilla and splenda. If you are using ice, I usually add that after everything else. Blend to desired consistency.

I've also been known to add a little coco powder or cinnamon to it. I've also heard of people adding a small amount of coffee or other spices to it.

        It's good!

1 cup of heavy cream is not acceptable on Induction.

and just the heavy cream is 800 calories! Eek! Calories count.

This might be a nice treat for a special occasion like X-mas though....

              Hey hey! *fist bump*

If you want an egg mcmuffin, try tossing those scrambled eggs on a Revolution Roll or an Oopsie roll. You get the bread vibe without the bread. (Below is a Wendy's Baconator on an oopsie roll).
