  • Chicken Coating

    Hey all,

    I am looking for some ways to coat my chicken. I just usually season it with ms dash lemon pepper and cook in olive oil but i want a crunch to it.

    any suggestions? Thanks in advance.

    - Pork rinds - Crush up some pork rinds and season the crumbs (make sure to count the carbs in the seasoning). Crack an egg and whisk it up a bit in a bowl. Dip the chicken into the egg, then coat it in pork rinds.

    - Parmesan cheese - Follow the same steps above but use Parmesan cheese instead.

        What kind of seasoning would work well with this idea?

          I use a recipe that I got here actually.. Melt butter.. dip the chicken in the melted butter.. and then roll it in Parm cheese, with your favorite seasonings, like onion powder, or garlic powder etc...mixed in the parm cheese.. and then bake the chicken in the oven.. and seriously its the best chicken I have ever had....I do it with chicken wings..

            I use black pepper, cayenne pepper, garlic powder and then whatever else I'm in the mood for. Just be sure to account for the carbs in the spices.

                I tried simply dipping a chicken breast in egg, then sprinkling crushed pork rind with no other seasoning. Then I fried it in coconut oil, and it turned out good.

                It smelled like pork rinds, while it was cooking, but could only faintly taste pork, when eating the skin.

                I'll cook it again~

                    I think flax seed meal tends to absorb moisture. I'm a fan of the pork rinds as crumbs (but can't stand them as regular pork rinds).

                      Like Cleo said, the flax meal does work but doesn't really crisp up the same. Maybe if you made a batter using cream and water with finely ground flax/linseed it would be better.
