    When you say "green bell peppers from food processor" does that mean you pulverize them?

      yes chopped up very fine into a liquid then cook with it or mix into meat. Anything to hide the bitter taste. I Will run to the store tomorrow and get an assortment or veggis and try many things again. I am not scared to try, but failed many times before. I can eat stuff like broccoli is i take from freezer the pulverize it, refreeze to ice then eat it by spoon full with mouth full or water. Just swallow that way i do not get the bitter taste. I find that it all works better being raw and frozen. As people can see, i been suffering with this for years and hope to overcome it one day.

        Have you tried Jicama? You can cook it like the apples with cinnamon and splenda, or you can just eat it raw. I have heard you can cook them and a few other things to be like chips too.

        Another is pumpkin...Do you like pumpkin pie? Mix pumpkin with cream cheese and splenda and pumpkin pie spice and you have a vegie!

        How about radishes? I like mine fried in oil like potatoes.

        Same with Turnips! I use them just like potatoes in soups, fried, and many other ways.

        How about cabbage? Do you like fried cabbage? If not, mix a bit of bagged cole slaw mix into some meatloaf...It cooks down and all you taste is meat...i do that with plenty of veggies.

          How about red or yellow peppers? I can't eat green peppers raw as they are too bitter for me, but love the sweeter ones.

          I often make my veggies into soups by sauteeing them in butter till soft then using my stick blender to turn them into a puréé then adding cream of meat stock and purééd meat to them.
          Or use them after sautééing them prurééd into a sauce to top meat with.

          A cup of raw spinach will cook down into no more than a couple of spoonfuls once cooked in butter and purééd so can be easily 'hidden' in other food.

            that sounds interesting. I will have to try that. Thanks for the tip. Have a few questions on this process

            1. I thought when you cook raw spinach, it makes it even more bitter as the juices come out. Wouldn't it stand out in what ever you are hiding it in?

            2. Sounds like the butter will mask some of the taste or will it highten it since veggis are now cooked?

            I am not afraid to try, going do some veggie shopping later this afternoon.

              I only buy the baby spinach leaves which are not quite as bitter as the older ones, and I find slowly cooking them in butter does not leave a nasty taste.You could use one of your allowed 3 servings a day of sweetener in them I suppose.

                You don't have to eat vegetables plain. Mix them into casseroles and other dishes. Check out this website Linda's Low Carb Menus & Recipes - Main Dish Recipes it has tons of Atkins friendly recipes, many of which are easy to make and taste great. You can mix your veggies into stuff you already like to make it easier. A forkful of broccoli tastes great when you have chicken, a little cheese and bits of bacon around it.

                  I mostly love veggies but find celery just revolting. As it is very good for my blood pressure I do try to eat some at least once a week. I dice it up and add it to a tuna quiche I make and I can hardly taste it at all. It is VERY delicious! The recipe is from linda's low carb "tuna muffins" - I add less cheese and more eggs so that I don't overdo it on the dairy.
