  • The only vegetable that I like is broccoli...

    and cauliflower. Is this a bad thing? I know I am not getting enough veggies in, so lately I've been feeling weak and just "blah". I have about a cup of steamed broccoli (w/ butter) with my dinner. Every once in a while I will have a salad. Here is my typical menu:

    Breakfast:
    3-4 slices bacon
    1-2 egg(s)

    Snack:
    String cheese

    Lunch:
    Hamburger patty w/ mustard

    Dinner:
    It depends... either chicken breast or some sort of red meat
    1 cup steamed broccoli w/ butter (sometimes w/ parmasean cheese)

    Obviously not enough veggies. I don't even think I am reaching the 20 mark for carbs in a day. I am very picky when it comes to veggies. Pretty much the only thing I eat is broccoli and cauliflower. No peppers or squash...

    Help?

    Have you tried saute'd radishes? Sautee'd bok choy with a tiny splash of soy sauce? Mushrooms cooked in real butter, or stuffed with cream cheese? Cucumbers are a vegetable, celery.. look over the lists and find some variety. You will feel better if you get more veggies. If you shred spinach, you can hide it in an omelette. Use a white cheese like muenster and you will think you are eating gourmet!

    Mushrooms are good with eggs too, to help you get some carbs in the morning.

      How about jicama? Snowpeas? Turnips cooked in the oven like fries?

      How about a quiche for breakfast with a small amount of cut up veggies?

        Mashed turnips with lashings of butter?
        Sliced peppers sautééd in butter?
        Peppers stuffed with creamcheese and wrapped in bacon and baked or grilled?
        Lasagne made using grilled aubergine (eggplant) slices as the pasta?
        Shredded courgettes (zucchini) mixed with egg and fried in butter as 'hash browns'?
        Any cooked veggies pureed and made into soups with cream and/or butter and water? You could add cooked chicken to these too.
        Wondering how to get 'most' of your net carbs from your induction veggies?

          I will tell ya...I am not a vegetable eater either. Some of them make me gag just at the thought of them. But you know what? I have been trying different veggies and preparing them in different ways and some of them are actually pretty darn good if they are prepared in the right way...not overcooked, not undercooked.

          Some of my new veggies are celery which I used to hate blech!! I like it now, and will eat it raw even! I also started eating leeks, and those are really good too!

          I'm just saying...you should try new things and some of the recipes here...you might be surprised how well something tastes on your palette after changing your eating habits!

            Definitely try a few things - I have eaten veggies on this diet that I would have have before - your taste buds and your appetite changes!

            Have a few little experiments - trust me you will find something you like that you would never have thought of! :0)

              Your meals sound like mine--I am sure to get in a vitamin....and try my best to eat the vegies. I actually LIKE them but since they are so limited for now- I get "sick" of the same old ones (broc, spinich, sp squa, green b). Try your best...hide them as the other poster said...take your vitamins!

              And GOOD LUCK. You are hardly eating anything! Amazing how your hunger is curved!! Isnt it???

                Best thing EVER! Slice zuccini, dip in egg and then dip in parmasan cheese and fry in butter! Oh girl, you're gonna love me!

                Next best thing: Green beans (fresh) boiled in chicken broth with salt/pepper dash of garlic, and crumble up nitrate free bacon on them and boil til tender... that's another goodie.

                  Oh! how could I forget, mashed turnips. Also awesome with a little bacon crumbled in, but butter works too. You can cube and cook in microwave, and mash with a fork, it doesn't have to be a big production. Yummy!

                        I am in the same boat... I like Broccoli, Cauliflower, and green beans, I can handle a little spinach, but from the can.. All of the other vegetables everyone else mentions...I couldn't do.
                        No.. Celery, peppers of any kind, mushrooms are a big no no, cucumbers, radishes, bok choy, zuccini, squash, the list could go on and on.

                          Just a suggestion...

                          I have found my tastes have changed dramatically since I went on Atkins.

                          Some things - like eggs and milk - I disliked before, and I dislike now.

                          Some things - cheese and cabbage and zucchini - I disliked before, but I like now.

                          I don't like Pumpkin but I'm going to try some this weekend, because all of a sudden it's starting to appeal to me/

                          The only way to know is to try it - and try it different ways. I like cabbage raw and cooked (stir fried) but not boiled. I like zucchini stir-fried lightly but no other way.

                          Perhaps after some time on Atkins, you'll find that you like things you didn't like previously too!

                            Hi Gel, I've never really liked mushrooms much... my best friend loves them so maybe she can cook some for me and I will try a little. I am trying to be open-minded on this diet lol!

                            ImREADYImREADY, I feel your pain! Although I don't mind cucumbers or celery. They both have a very mild taste to them.

                            Thank you Skeptika. I've noticed a little change in my appetite. I am willing to try zucchini since I use to eat it fried before this WOE. Guess I will have to just suck it up and try stuff little by little!

                              The first time I was on this diet, I tried a bunch of veggies like asparagus & salad greens that I HATED before, like with a passion. The only veggie I enjoyed before that was corn & obviously, I can't really have that right now. :P

                              But now I'm a crazy salad addict - took awhile to find a dressing I liked though (when I was younger, i was all about Thousand Island, now I can't have anything but Italian!). But all I had to do was try it, with a bunch of different dressings - and ta-dah! I started eating them

                              One of my old landladies used to marinate vegetables too. She had a bunch of veggies I hated like celery & such, and marinated them in italian dressing overnight - they didn't even taste like veggies anymore, they tasted like my salad! It was awesome! I was shocked that she managed to prepare veggies I actually enjoyed.

                              I also looooove stir-frying.

                              The other option of course is to "sneak" tiny bits of veggies into other stuff you eat. Chicken breasts with alfredo sauce & little bits of asparagus or something sprinkled all over it? Not bad. Meat loaf with a few extra veggies like peppers & onions mixed into it? Helps a bit. Not a huge serving obviously, but it can get you used to the flavor & texture in little steps, so you ease up into more obvious veggies in your meals.
