Two things I've found that I think are really awesome are the Joe's Whole Ground flaxseed, which has per 2 TBSP I think 4 grams of carbs, and 4 grams of fiber- It's like five bucks at my local Warehouse Market.
Another thing I've been doing is making 'faux california sushi rolls' which is basically the seaweed nori with an ounce of cream cheese spread straight through the middle, sprinkled with half a cup of broccoli slaw (pick out the carrot if you must but it's probably two tiny little sprigs) and with half a chopped avocado down the middle. Fold, eat and enjoy. Tastes an awful lot like a california roll- haven't tried it with cauliflower 'rice' but I might soon.
The best thing about the seaweed is dependent on the brand it may be ALL fiber. So not only are you getting fiber and potassium from the avocado but fiber from the seaweed as well. Makes me excited to eat, and they taste good, too. Although you have to be careful what brand you get- not all seaweed nori is created the same. The first stuff I had in my cupboard was all fiber, but the next batch I bought had NO fiber and was two entire carbs for a whole wrap. So make sure you look at the label.
Another thing- for drinks, if I crave sweet stuff, at Dollar Generals they sell this stuff called 'Nevella' which is a sweetener just like Splenda- same ingredients, etc. Haven't tried it, but it's a lot cheaper. Anyway I buy the Lipton's decaf cold brew tea and mix some Nevella with it.
Anyway- anyone else have any really amazing, quirky ideas for stuff you've found outside of the 'norm?' I know there's already a LOT of recipe forums out there and recipe websites- but anything, I mean. What you drink, something you've come up with, etc.
