Unless I'm at a place that serves a bacon cheeseburger (sans the bun) I don't bother with bacon - it's just too messy and I've never been successful at getting bacon flat and cooked crispy without burning. Cracker barrel makes the best bacon yet and their bacon cheeseburger is wonderful, I had one over the weekend (the low carb section) and just brought out two oopsie rolls (made with mayo instead of cheese) and honestly, it felt exactly like I was eating it with a bun.
The only thing I do here is use a sugarless bacon and only a very small bit of it for when I'm sauteing my green beans. It creates a fat base for flavor, I saute them very very slowly so it doesn't make a mess and I let my dog have the piece when the cooking is over.
