  • Breakfast

So - my routine in the morning is such that I don't have long before I leave the house, and before going on atkins would have a bowl of cereal at the office.

Because of this I am now really struggling to get breakfast in the mornings and I would say that in the past week I haven't eat breakfast in the weekdays.

Do you guys have any breakfast tips for something I could easily eat at the office which is going to be good for my extended induction? I would really appreciate some ideas!

    Thank you!
    James

    Re: Breakfast

Well, you could get up earlier so you could eat at home.

    Not having breakfast isn't good.

Why not make an egg casserole so that you can heat up a chunk in the morning?

      Re: Breakfast

Do you have access to a microwave? If so, make some items ahead of time, grab the container out of the fridge, heat and eat at your desk!

Things that can be taken in containers and eaten cold or heated:
      Egg or tuna salad
      leftovers from dinner
salad (yes, I've had a salad for breakfast...)
      Hard boiled eggs with veggie
Make ahead the egg muffins with side of bacon?

There are lots of recipes that can be made ahead on the recipe board, Linda Sue has some great quiche recipes that I LOVE and will sometimes make, freeze in individual portions and take to work. I'm not a typical breakfast person, I will have dinners for breakfast and sometimes omelettes for supper.....

I'm sure there will be more ideas from others!

        Re: Breakfast

How about hard boiled eggs, celery (or other veggies) with cream chees (you could cut up veggies the night before), you could fry up a whole pound of bacon and take a few slices for your commute to work.

I'm all about sleeping in as late as I can and I'm one who prefers "breakfast" foods in the morning.

Oh, you could also make up some one-minute muffins, toast a slice and apply cream cheese! Just make sure you are chasing it with lots of water.

            Muffin in a Minute

            Serving Size: 1

            1/4 cup flax meal (8.09 total carbs, 7.6 fiber) (30 g)
1/2 teaspoon baking powder (0.64 net carbs)
1 packet splenda packet (0.9 net carbs)
1 teaspoon cinnamon (1.84 total carbs, 1.2 fiber)
1 large egg (0.6 net carbs)
            1 teaspoon butter

(total carbs is 12.07, fiber is 8.8; net carbs is 3.27)

Put the dry ingredients in a coffee mug.

            Stir.

Then add the egg and the butter. Mix.

Microwave 1 minute (or more). Take out. slice, butter, eat.

            Set the mug to soak.

Cream cheese would go nicely, too.

The shape of this can be changed by making it in a bowl.

It can be "toasted" once it's cooked.

            The cinnamon can be replaced.

Flaxseed is linseed in the UK.

                Yes, it tastes fine.

Some people don't like it though.

I am (WAS) a bread lover and I think they taste yummy! I've made them with other spices too, such as italian spices and garlic. They made a nice bread for easter dinner.

Don't eat too many of them though!

I was going to suggest this as well. There are tons of low carb quiche/casserole recipes to be had and I'll bet that would work really well for you.

There are lots here, just make sure they are induction recipes (look under Menus, then Induction Menus and you will be able to see all the different breakfasts on the menus). Keep on keepin' on!

                      Re: Breakfast

you can make omlette miuffins and store them in the freezer or frig and pop one in the microwave to warm up for breakfast on the go.

all you do is put whatever veggie you want chopped up fine in the muffin cups add some bacon ham or sausage thast has been cooked if you want any. add some cheese besure you have measured so you know how mucvh cheese you are putting in a muffin. and then in a bowl crack 2 eggs for each muffin whisk them up and pour over the veggie cheese meat bake in the oven at 325 until the eggs are set about 15-20 min. if you leave a muffin cup empty then fill it part way with water so all other muffins cook evenly.

I fixed broccolli and cheddar ones
mushrooms bacon spinach and swiss cheese
good old bacon cheddar and egg ones. wester ones and even spicey mexican ones with jalepenos and cheese.

you could even do just herbs or spices with your eggs
