You can eat it plain--it tastes like cottage cheese.

The other thing you can do is make an individual pizza-quiche out of it. Mix 1/2 cup ricotta with 1 egg. Spread it on a microwave safe plate. Microwave for a minute or two until it's set. Then throw on your toppings. Microwave again until the toppings are hot.
