    Re: Ricotta Cheese

You can eat it plain--it tastes like cottage cheese.

You can mix it with egg, chopped herbs and use it as a filling in a layered eggplant or zucchini casserole.

You can mix it with egg, chopped herbs, parmesan cheese, spread in a greased pan and bake it. When it's cooled, cut the mixture into cubes and serve with spaghetti sauce.

Or you can mix it with egg, vanilla extract, sweetener of your choice, spread in a greased loaf pan, bake it and when warm cut into slices and serve with fresh fruit for a "cheesecake" like dessert.

I mix some ricotta with almond extract and splenda and sprinkle a few chopped pecans on top. It tastes like the filling in a cannoli.

Use it to make a lasagna w/o the noodles. I repace the noodles with cabbage leaves. I mix the ricotta with a couple of eggs and parmassan cheese. I add it between the layers of cabbage, sauce, hamburger, and mozzerella cheese.

When you get to the fruit rung, ricotta makes a nice desert. It has sort of a grainy texture, but a good flavor.

The other thing you can do is make an individual pizza-quiche out of it. Mix 1/2 cup ricotta with 1 egg. Spread it on a microwave safe plate. Microwave for a minute or two until it's set. Then throw on your toppings. Microwave again until the toppings are hot.
