    I'm a little concerned about the portion size for the pumpkin pie or sweet type of recipes that call for a lot of Splenda. 1 cup of Splenda = 16 Tablespoons, so 1/16th of that recipe would be all you could eat for your daily sweetener allowance. That would only give you 1 net gram of pumpkin carbs.

    That's okay for a dessert, but the author of the thread was originally looking for ways to increase her carb count using pumpkin, and 1 gram is hardly significant. Some of the other recipes have a higher concentration of pumpkin in them.

    Thanks Colleen for starting this thread and everyone for your ideas. Those are some great recipes...I can't wait to try them out too. Although I personally will hold off on some of the sweet ones till Maintenance, but they sound delicious too.

      That's why I don't use pumpkin as a dessert or a sweet snack food----too much adulteration with the addition of 'extra' ingredients. If it's used as a vegetable, you're more sure of getting the pumpkin---its carbs and its nutrients (fiber, vitamins/minerals).

      Speaking of pumpkin....I bought a type of japanese 'pumpkin' today. So I'm going to cut it in half, remove the seeds, rub the insides with a little butter and bake it. It will go well with the turkey legs.....

        Pumpkin is one of the things I really have to be careful with. The carb count can really get you if you aren't careful but it sure makes a great treat.

        Yummmm.... Megs, that Japanese pumpkin sound good that way.
