  • how to get some extra carbs

    I know you've talked about this and I've searched it out and gotten the ideas like 'pumpkin', which I've done but don't particularly care for, brussell sprouts and broccoli to get your carbs a little higher. But would you mind humoring me and give me more ideas? I always eat a salad for lunch, usually with some form of protein on it. I eat some sort of veggie at dinner, often squash, green beans, cauliflower, broccoli, brussell sprouts and asparagus. Always eggs and bacon in the morning. I add onions in where I can because I like them. Oh and mushrooms too. Any thoughts on what higher carb foods I could start using while I'm on the dairy rung? Thank you!

    I use tomato and garlic more now because I can't come up with anything else, like you.

        Tomato or spaghetti sauce are quick options too. If you purchase canned, make sure you read the labels for the amount of carbs and sugar in the ingredients list.

        I like a chicken breast or some ground beef with spaghetti sauce, topped with mozzarella cheese, baked in the oven.

        I also like sweet yellow peppers raw with ranch sauce, or peppers and onions sauteed in an omelet.

            I buy a spaghetti sauce called Ferrara's and it is DELISH. It has no added sugars or anything, so while it's not marketed as low carb, it's only about 4 per 1/2 cup which is more than enough for one serving. It has 5 total with 1 gram of fiber. Not sure where you live but I get mine at Harris Teeter grocery stores!

            I'm not a big veggie fan either so I'm still struggling to get my 3 cups daily.

                I do combinations of tomato sauce (sugar free of course) and ricotta cheese.

                For instance, take a zucchini squash and "peel" the whole thing with a vegetable peeler into ribbons. Steam the ribbons and use as "noodles" Layer with ricotta and meat (beef/sausage) and tomato sauce. Yummy.
                This gets your carb count up pretty high, and well, it's that italian type dish that are soooo yummy.

                    For the recipe that I talked about?

                    If so, I enter the TOTAL of ALL the ingredients into fitday, then I divide the nutrition info for the whole recipe by the number of servings and enter a custom food into fitday. Then I delete out everything but the one serving of that recipe. Usually I'll do this in a future day where I don't have any foods listed. Then I go delete them all back out once I've created my custom food entry.

                        How about 1/2 cup cottage cheese, added as a snack? A little Splenda, and either unsweetened cocoa powder, or cinnamin, it's pretty tasty.

                          Oh yeah, I'm all about the cottage cheese and splenda! I've added a few chopped up tomatoes as well. Yum!

                            Carbs don't "cook out". A vegetable measured cooked has more carbs than a vegetable measured raw because vegetables/fruits cook down: their volume decreases as they cook. Depending on the vegetable/fruit, it might take more vegetable to make 1/2 cup cooked, than 1/2 cup raw. For example, measure a cup of raw spinach, then cook it and measure it. It will be less than 1 cup. So the cooked cup has more vegetable in it.

                            Cottage cheese, etc. are all fine to add when you get to the Fresh cheese/Dairy Rung of OWL.

                              I forgot to add....during OWL rungs, you don't have to follow the Induction rule of measuring your veggies raw. For the OWL rung foods, you measure it by the net carbs. So if 5 net carbs of a food is 14 cups---that's what you should be eating if you want 5 net carbs of that food. Likewise, if 5 net carbs of a food is 1 tablespoon, that's all you eat. The only exception is nuts and seeds: Dr. Atkins only allowed us 1 ounce of most nuts/seeds and cashews are limited to 1/2 ounce.
