after successfully navigating the veggie and dairy rung, i am starting the nuts and seed rung next week. i have spent 2 weeks per rung, and plan on continuing that. anyway, macadamias and almonds are the best low-carb choices, correct? oh, and sunflower seeds. how do you incorporate them into your diet?

I've found that just about the only way I can incorporate nuts and seeds is to use them as a condiment or ingredient in a recipe of something else.
Even that sometimes will set my cravings off. Nuts are pretty bad for me, personally.
However, you need to try them for yourself. I found two things that were really convenient. Pumpkin seeds and sunflower seeds as a topping on a salad. Walnuts on a salad. Ground almonds used as a "Flour" in breadings and casseroles.~Joy

Well that is where I am. I am still experimenting with different things so if you come across something let me know. Almonds have become my staple take along snack. I carry some with me everywhere - just in case. I have used walnuts in salads (good with fetta cheese and spinach). I have been making some varieties of flax muffins. I really like those. And I add sesame seeds to my stirred fried veggies.

a helpful hing would be to measure out your portion and then put the bag, box, jar, whatever back in the cupboard.

I roast whole almonds in a little olive oil and then sprinkle them with seasonings to use as croutons in my salad. I also use almond flour as well as hazelnut flour as a breading and to make "pancakes". I use sesame seed paste as a dressing for veggies and to make chinese "cold sesame noodles" (using mung bean sprouts as noodles). Peanut butter makes a good chicken satay, as well as being spread on kohlrabi or celery. Chopped Pecans go into salmon cakes to give them some crunch. I also like pecans straight, or spiced with some cayenne. I've also made cinnamon pecans with a little erythritol and, or course cinnamon tossed on lightly oiled nuts (to make it stick) Any of the nuts also make a nice pie crust for both sweet and savory pies. Usually pecans or walnuts for the sweet ones, and almond for the savory (YMMV) Likewise, sprinkle some finely chopped nuts on top of fake mac'n'cheese, or toss in with buttered veggies.

by now i have nuts and seeds every day as i eat bread made from almond flour, sunflower seeds, pumpkin seeds and so on.
i also like to eat pecans just as something to snack on when watching tv...i dont have many though as u can taste the carbs...pecans are quite sweet.
try whatever you like of every rung, just stick to the rules.

I am there too. I use it in my salad or just use an oz or two roasted almond (check the roasting ingredients) while reading something.

Brazil nuts are way low but you can't buy them by themselves, I don't think?
They're my fav tho. I'm looking forward to nut rung the most, I'll at least have the 24 almonds. Most nuts are a bit salty, so I'm going to hunt some low/no salt nuts when the time comes.Start Date: 1/12/08 - 243.5

I eat nuts everyday. I am very thankful they are not a trigger food for me, though they are for MANY people. Usually I eat almonds as a snack, and I eat peanut butter on celery, or carrots, or apple slices. Peanut butter can also be used in shakes made with silken tofu.
Sunflower seeds and pecans are great in a salad, or mixed with cottage cheese or yogurt. When I eat warm pumpkin, I sometimes top it with chopped walnuts or pecans.
I've also made little "cakes" out of almond meal and flax meal, they're really good! Flax can be used to make a variety of things, from crackers to cookies to bread to wraps.

I haven't introduced the seeds yet.. adding one thing at a time, but I really LOVE this rung.
As for the cheesecake, yes I used the same recipe, the only thing I changed was the cream cheese, used Philedelphia Neufchatel cream cheese (1/3 fat) rather than the original one as it has less carbs in it. Also used a special no sugar hazel nut flavor syrup (0 carbs/2 tablespoon serving) instead of the lime.. I'll tell ya, it was real something.Start Date: 11/13/2007

I am not quite to the nut rung (just starting dairy this week) but I was wondering if it was best to buy the "raw" type of almonds, pecans, etc. or if the Plantar's type (roasted and salted) is okay. Also, is there a lower carb peanut butter than 2 net carbs per tablespoon? I looked at a jar of Laura Scudder's Old Fashioned Peanut Butter (oil on top) and that was the carb count. I liked it because the only ingredients were peanuts and salt--used to eat this type when I was a kid.
