Ideas to get more veggies in??

  • Ideas to get more veggies in??

    I'm not really that hungry..so I'm eating the typical induction plan that I"ve been on and I just can't stomach any more veggies to do my veggie rung. I'm only eating 3 meals aday...typical meal plan looks like...

    eggs & sausage sometimes cheese
    chicken salad (lettuce, cucumber, tomato - sometimes cheese) - or hamburger w/ lettuce
    meat (depends on the day what kind) and green beans or broccoli or brussel sprouts or another salad

    So through induction I haven't been getting my 2 cups of salad in..then I have probably once or twice a day Nestle hot chocolate (low carb) only 2 per serving.

    Thats pretty much a typical day for me.

    How would YOU go into induction and add more veggies if your really not that hungry?

    Cooking "veggie frittata" or sauté veggies ..... then you´ll eat more veggies not noticing .....

        first I'd take out the hot chocolate mix with the water. if you got room for that you got room for food. Now I'd make a cup of my favorite acceptable veggies soup like cream of pumpkin, cauliflower asperagus spinach broccoli or regulare veggie soup to replace it with. If you are using it as dessert how about some pumpkin pie pudding made with real pumpkin cream or cream cheese, spice and gelatin?

        I'd add some veggies to my eggs and make omletes or scrambles. purree some veggies and add to the burger. How about some veggie dip with sticks how aboiut some sauces like tomoto or roasteded peppers?

        there are lots od ways to add veggies just use your imagination.

          (Frittata) Example: I fry lightly mushrooms, minced onion, minced red pepper. When soft I add tuna (1 can in olive oil) without the oil and 3 beaten eggs. Mix a little. Cook gently until the eggs are set. Then I flip it over in the pan for the top part to finish cooking. Voilá! :nod

            In Spain we call it "tortilla" but I thought that term would confuse you ....

              If you make pot roast, adding veggies is really easy. About half way through the cooking time, add a cup of chopped celery and 1/2 cup of onions. When the pot roast is cooked, remove the meat and set aside. Pour the vegetables and the remaining cooking liquid into a blender. Blend until smooth. The pureed vegetables will thicken the liquid, so you'll have flavorful, thick, gravy for use on your pot roast.

              Puree a jar of roasted red pepper and you'll have a "red sauce" for chicken or fish.

                by the way ... I cooked today a pumpkin cream. That´s another way to eat weggies.
                I cooked it with 2 zucchinis, 1/2 onion, 1 leek, 150 grs pumpkin (the orange one), water, salt&pepper and a ham bone.
                All the veggies lightly fried in olive oil and then add the water and the bone. 30 minutes in the pressure cooker.
                Very nice!

                  One of those DUH moments!

                  I'm reading 2big's post about how to add veggies, and thinking, 'Wow, I didn't know that pumpkin is a veggie'.

                  Not quite sure what I thought it was, but never put it in the 'veggie' category...maybe a fruit?

                  I must like you all to share that bit of info.....

                    It´s a veggie. Same family as zucchini.
                    100 grs Pumpkin (cooked, boiled, drained, without salt) = 4,90 carbs.
                    I recommend you the soup/cream I´ve posted.

                      I made a great lasagna for lunches this week. It has spinach mixed in with the beef and eggplant for noodles. You can add tons of diff veggies in lasagnas.

                            I don't believe I've seen fresh pumpkin in our local supermarkets except around halloween.....

                              What a pity! I prefer fresh veggies rather than canned. You could save some carbs! ask and tell me .....
