    Its spring people (at least in Southern Texas) Blue berres are out! WoooHooo
    I made a flax/blueberry muffin this am. It was wonderful. And do you knoe the best part??? I am on ATKINs I added butter to it. Have not had butter on a muffin since I was a kid.

        wow your berries come early ours will not be ripe for months.

        it is amazing still to me all the stuff I can have as a part of my Atkins.

          This is from the recipe link
          Ingredients:
          25 grams (1 oz) Butter
          2 Medium Eggs

          4 heaped tbsp ground flax
          1/2 tsp baking powder

          How to Prepare:

          Melt butter and add eggs and mix
          Add ground flax (ground linseed) and baking powder and mix till smooth(ish).
          Leave a minute or so to thicken up then put into a microwaveable container about 5" x 4" and nuke for 3 minutes.
          Turn out and cool.
          Makes a dense loaf, quite spongy but less so when it cools.
          Good for sandwiches, toast, and grated as breadcrumbs.
          You could add parmesan and herbs to make a savoury loaf.


          To this I add 1/4 c. of blueberries and 1 packet of splenda. It comes in at about 10 carbs.

            The recipe you posted is what is reffered to on ADBB as Book's bread LOL as she was making lots of posts about it for constipated newbies wanting bread and relief. Sounds like a good OWL one too

            you could also just add blueberries to any of the flax muffin recipes in the recipe data base.

                    It is a very great pity that Blueberries are so expensive in UK

                    At the moment about £2.50 for 4 oz
                    Atkins didn't say 'Calories don't count',
                    he said, 'Don't count calories.'

                      THe only blueberries I have are ones in the freezer I picked last Labour Day. Wouldn't even be able to find the bushes at present - under too much snow (and presently, an ice storm)

                        these are my favorite berry...well along with all my other favorite berries...

                        try being bold and add 1/4 cup of blueberries into your srambled eggs then top with cheddar cheese...I swear it is really good!!!

                          Actually I think Book's was the 'sweet but legal flax bread' recipe which is an oven baked one - the one quoted here was the 'microwaved flax bread' recipe!

                          I just tried to link to Book's recipe but it looks as if the recipes in the database with the link at the top of the page have gone again! :sadblinky

                            Berries are just ripening here and I'm lucky enough to have them growing wild all around me. Thanks for this recipe, going to be trying it out later on
