I'm moving on up to legumes this week and wondered what's the popular type of legume folks like to eat.

I like chickpeas, pinto beans, rosa beans and navy beens. I boil them and mix them into salads or a cooked vegetable medley. I mash the cook beans, add salt, pepper, herbs and spices and olive oil for a spread for veggies. The same mash can go into ground meat to act as a binder for meatballs and meat loaf.
I hadn't thought about using the beans as a binder with meat. That would be yummy. Oh, you make your own humus...nice! That sounds good, too.

I opened a can of black beans, to my husbands utter amazement and watchful eye with his comment "Can you have that yet?", and I enjoyed 1/4 cup of that with my salad. I'm looking forward to making a small batch of chili---when it gets cool enough for that. But then again, chili burgers sound good, too!
Navy beans for ham hock/bean soup sounds good, too. Okay, there's a list of soups I need to compile again for fall coming.

Wow Megs those are great ideas.
I am still having a hard time coming to term with the legumes. So far I have discovered that I really like soy. Particularly soy milk.
As for recipes - not so much- the allotments are so small. I have made bean/avocado salads a few times. And lightly beaned chili a couple of times.
I also made hummus - always been one of my favourite things - just have to watch the portion.

I know what you mean about the allotments...I realized that 1/4 cup of the black beans for 6 carbs just doesn't seem like much when you really think about it.
Yum, avacado and beans, now that sounds good, too.
Soy and me only agree on certain conditions, and it has to be in very small amounts. I think it's the taste that gets to me, or maybe the smell.

I love all beans, but the portion is so small that I just don't bother. I want a big bowl of beans when I have them. I've had pinto beans twice in the last three years and for the Fourth of July, I made Boston baked beans from scratch so they would be legal, but I still had trouble with portion control. I had been craving baked beans for sooooo long. I divided the rest up and put them in the back of my freezer.

The portion size IS small, that's why if it's used as an ingredient to a large recipe, it extends the beans. For example, I smush the cooked beans, mix with a taco sauce and cheese and use that as a filling for an omelette. Or mix the mashed beans with sour cream for a faux-fajita topping. Or the binder in a burger/meatball is another way to extend the beans.
Split pea soup sounds great, Megs. And that you've made an induction friendly recipe just shows how much a person can do with food if they are able to...I'm lucky if I can cook without burning or under cooking things.
Sunny, portion control is the biggie that I'm trying to be very disciplined in this time around. Homemade boston baked beans sounds like a great thing--almost too great.
I'm begining to realize the importance of being very careful of how much I consume of legumes. Come to think of it, I know for a fact that I wasn't as careful in the past about consuming small amounts of legumes--just that old fable idea that "it's legal, so I'll eat it!". Gosh, I've got a lot to relearn.

I love kidney beans and black beans, and I'd make a 1-bowl "soup" or "chili" with them. Soup in the fact that it's hot with liquid, with chunks of veggies.
I would take my portion of beans (sometimes, I admit, I would double the portion, granted, I was eating 90+ carbs/day) and add 1/2 can ro-tel (liquids and solids) or equivalent amount of salsa. I would mix this together and heat in the microwave for a couple of minutes. Add 1 tbsp. sour cream to mixture, top with 1 oz aged cheese, or some queso fresco. This is a REALLY good meal! You could also add some ground beef or chicken to this. I would also cut up bell peppers and add them into the mix.
Black Beans - I have a recipe for black beans cooked with onion,peppers, tomato, garlic and tomatoe. a 1/4 would be about 6 carbs b/c it would be part veg and not ALL bean. I LOVE it on nachos and taco salads! i made it for my daughters birthday as part of a burrito bar and they were devoured.
lentils (the tiny ones - I don't care for the larger ones) in soup
Pinto beans: mashed, whipped and "refried" (I am thinking of the faux chips as nachos again)
Chili - a little beans goes a LONG way in chili!
There are tons of casserole or stew type recipes with beans in them for winter - casolet, ham and beans, Italien soups. I like chicken broth with chard and white beans (Again you don't need a lot of bean to get the right feel.
Oh, that sounds great, Julie---kind of like a "Taco" soup, especially with the queso fresco (I think it's better than any sour cream on the market!).
I'm trying to get a list of lunches for the coming weeks, I'm thnking chili, taco soup will hit the spot a couple of times. There are a couple of gals I know I will be working with and will most likely be "You're eating beans! I though you were following Atkins?"....gosh, I can't wait to go back to work just thinking about that.

The only lagume I eat on that rung is soy. I love making zuchinni bread with soy flour.
Sherri's Zuchinni Bread
3 eggs
1 cup canola oil
2 cups sweetner of your choice
2 cups grated zuchinni
2 tsp vanilla
1/2 cup chopped walnuts
1 cup flaxmeal
1 cup soy flour
1 tsp. baking soda
1 tsp baking powder
1 tsp. salt
3 tsp. cinnamon
Beat eggs lightly, mix with oil, sweetner and grated zuchinni. set aside
Sift soy flour, flaxmeal, baking powder, baking soda and salt. mix with wet ingrediants well. Add nuts.
Put in well oiled bread pan and dust with soy flour. bake at 325 degrees for 45-50 minutes or untill tooth pick comes out clean.
This bread is great toasted in a thick sliced toaster and buttered or with cream cheese frosting.
