I had a half day at work yesterday so I went to the Asian supermarket and found some fingerling potatoes. They're about 2 ounces each, so 4 net carbs will be about 1/2 of the potato. Anyhow, I only bought enough to see what will happen. Hopefully, my potato-tooth doesn't have a chance to revive....
mix them up in something else so you get a taste you recognize as having potato but not as the main ingredient wanting a bigger serving type thing. Keep us posted on it.
My first potato meal will be a Spanish tortilla (fry the sliced potatoes in butter or oil, beat eggs, pour over and cook). I figure between the eggs and oil, I'll have enough fat to blunt any insulin response and I'll still get a "potato" taste.
