    Also you can adjust the amount of garlic or types of spices used to fit what you like. I roast it at 350 until almost done then turn the broiler on for a few minutes to crisp up the skin or the butter oil mixture makes the skin a tad soft.

      Yes I know I LOVE LOVE LOVE crispy chicken skin!!! Lol
      I used to rip the skin off of everything thinking it was so wrong to eat! Sometimes I still feel guilty for eating the skins, but I am quickly losing that feeling Lol

          Yeah I am really bad about eating the skin off Chicken and Turkey. For along time my family thought I always bought skinless whole chicken or Turkey. I didn't tell them any different.

            Planning to have dinner (although it's still morning here!) of sausages (Italian sausages... just meat, no fillers) cooked with wine and fennel seeds with an aside of sauteed carrots and celery (diced and cooked together). The carrots and celery should be half and half quantities, but I ease up on the carrots.

              That sounds quite yummy Sally. I WILL find good Italian sausages one day here. At least I will not give up trying. It is either that or I am coming over there.

              Today was burgers with portabello mushroom "buns". My first time trying that. I thought it worked very well. I need to find a bit cheaper portabellos though. I had turnip fries with it. And splenda ketchup and bacon and pickles and cheddar and I was a happy camper

                Tonight was nothing special. I slow cooked some pork chops and roasted the rest of the asparagus I had before they went south.

                    Liv... I'll swap you Italian sausages for portabello mushrooms. I've never found those here.
                    The other thing we can't seem to get here is that fish Tilapia (or is it Talapia). I keep hearing about it and am dying to try it!

                      It's rainy and miserable outside so it's a good soup day. Thawed out some frozen cabbage beef lentil soup for dinner. Had some leftover chicken veg soup for lunch (it was also frozen).

                        Tonight is marinated, grilled eggplant and zucchini (aubergine and courgette) with some pine nuts (pignolis) and crumbled chevre (goat cheese) sprinkled on top. We're having this with grilled chicken legs.

                        The marinade for the veg and baste for the drumsticks is just Italian salad dressing.

                          I'm having baked chicken legs, mixed veggies (a combo of potatoes, carrots, broccoli, cabbage, and red bell peppers) and some mango. I also found this cheese from Germany that looks like a Brie or Camembert but has blue cheese-type veins.

                            Our broad beans are ready in the garden. We'll be having raw broad beans (double shelled) with cheese. Yumm....!
                            The only trouble is, they're rather carby, so have to be careful.
