  • Coconut Flour Adventures

    Well, I haven't had any adventures with it yet. I was so excited yesterday when my local grocery had Bob's Red Mill Coconut Flour at 50% off. I don't think anyone was buying it maybe? Anyways, I bought 3 bags. I stored it in the freezer beside my unopened bags of golden flax meal and almond flour.

    I haven't had anything bread like since last July. I am going to try making something bread-like soon. Might try Linda Sue's Coconut Bread but as I'm not big on sweetish things I'm thinking more of trying her cheese rolls I saw on another site.

    Has anyone had any problems with coco flour baked goods in the spikes and cravings department? Kind of nervous about trying it as I don't want to get back into my pre-Atkins bread-aholic thing. It will be an adventure...

    I'll come back to this thread and post pics of my baking and comments.

    I love coconut flour and make a lot of different things with it. It bakes really nice and baked goods taste almost like things baked with flour. You have to remember to add fat to recipes though as coconut flour is dry, I use coconut oil along with it to keep things moist. My serving size is one tbsp per day (not every day, just never more in 1 day) and I haven't had any problems with cravings. As a matter of fact it is very satisfying and makes me feel like I haven't given anything up at all. I haven't tried bread, I mostly use it for sweet stuff (pancakes, muffins, cake) and I did use it to thicken gravy with very good results.

      Mizski!! I am so excited and curious to see what adventures you come up with. We're in the same boat! My recent find is almond flour. I have never seen coconut flour around here. I'm going to make the almond bread today and see how that turns out. I consumed more carbs than normal the last 2 days and am feeling better and seeing the scale budge ever so slightly so perhaps gently adding the bready things back will be kind to us! I am a former addict of bread and potatoes so I know what you're talking about! We must tread lightly!

      So looking forward to watching this thread and seeing your updates!! Good luck!

        I've been thinking long and hard about this one, Mizski (and I bet you thought I was ignoring your thread didn't you?) Maybe you can use the flour in savory applications like as a coating for meat/seafood?

        I saw an episode of Cook's Country where they made extra crispy fried chicken. Perhaps coconut flour can be used for that? Or in applications that require some sort of starch like some fillings for stuffed chicken breasts or pork chops?

            Wouldn't that be wonderful?? Right now I'm thinking all the egg will be absorbed into the coco flour and not poof up. I might try it with popovers (same batter as yorkshire pudding) first. That way if it bombs, I won't have wasted all the nice drippings from the roast. Thanks for the suggestions though.

            This is what I'm thinking of trying from Linda Sue (I like lots of her other recipes so I value her opinion):



            from Linda Sue: I just had to make a batch of these after all the good reviews. I put 1/2 teaspoon of garlic powder and 4 ounces of sharp cheddar cheese in mine. They're not dry at all and they have an almost deep-fried crunch on the outside when they're hot from the oven. I baked mine in a muffin top pan. I'm sure they'd work on a baking sheet but make sure it's got a rim or the grease could run over the edge. They also spread a bit as they bake so don't flatten the batter too much. I left mine mounded.
            Don't they look delish?? I've gotten out of the habit of having bread/biscuits/rolls with meals for so long now I have to think of something to have them with before I make them!

            Here's the recipe for anyone else who wants to try them before I get around to baking them and reporting back.

            Cheese Biscuits

            Ingredients

            4 eggs
            1/4 cup butter, melted
            1/4 teaspoon salt
            1/2 teaspoon garlic powder
            1/3 cup coconut flour, sifted, 1 1/4 ounces
            1/4 teaspoon baking powder
            4 ounces sharp cheddar cheese, shredded (1 cup)


            Method

            Blend together eggs, butter, salt, and garlic powder. Combine coconut flour with baking powder and whisk into batter until there are no lumps. Fold in cheese. Drop batter by the spoonful onto a greased cookie sheet (rimmed) or muffin top pan. Bake at 205 Degree C (400F) for 15 minutes.

            Per Biscuit: 204 Calories; 18g Fat; 10g Protein; 5g Carbohydrate; 4g Dietary Fiber; 1g Net Carb
            Per 2 Biscuits: 407 Calories; 36g Fat; 20g Protein; 10g Carbohydrate; 7.5g Dietary Fiber; 2.5g Net Carbs

              I also found the coconut flour and made them, but I don't like coconut flavor so while they looked delicious, I didn't like them at all. DH did so I still make them for him every once in awhile.

                Maybe try the yorkshire pud or the popover by subbing 1/2 of the amount of flour with the coco flour. For example if the recipe calls for 1 cup of flour, use a 1/2 cup of the coco flour?

                  Great idea Megs! I was thinking about maybe trying to coat liver with it to make liver and onions?

                  Can only try it! Of course...when I get to that rung that is

                  It would be great to use it to coat stew meat as well I think.

                    I've made peanut butter cookies using coconut flour and they turned out pretty good.

                      I haven't used coconut flour yet, but I make pancakes with almond flour. Mizski, For something bread-like (and that golden flax meal in your freezer), I like this:

                      Focaccia -Style Flax Bread 1carb/12 servings.
                      2 cups flax seed meal
                      1 Tablespoon baking powder
                      1 teaspoon salt
                      1-2 Tablespoons sweetening power from artificial sweetener
                      5 beaten eggs
                      1/2 cup water
                      1/3 cup oil
                      Preparation:
                      Preheat oven to 350 F. Prepare pan (a 10X15 pan with sides works best) with oiled parchment paper or a silicone mat.
                      Mix dry ingredients well -- a whisk works well.
                      Add wet to dry, and combine well. Make sure there aren't obvious strings of egg white hanging out in the batter.
                      Let batter set for 2 to 3 minutes to thicken up some (leave it too long and it gets past the point where it's easy to spread.)
                      Pour batter onto pan. Because it's going to tend to mound in the middle, you'll get a more even thickness if you spread it away from the center somewhat, in roughly a rectangle an inch or two from the sides of the pan (you can go all the way to the edge, but it will be thinner).
                      Bake for about 20 minutes, until it springs back when you touch the top and/or is visibly browning even more than flax already is.
                      Cool and cut into whatever size slices you want. You don't need a sharp knife; I usually just cut it with a spatula.
                      Nutritional Information: Each of 12 servings has less than a gram of effective carbohydrate (.7 grams to be exact) plus 5 grams fiber, 6 grams protein, and 185 calories.

                      I think I found it on this board...I'm sorry I can't remember who posted it. I have used it to make a sandwich, or as a "side" with soup or stew. I find this MUCH easier to make & store than oopsies, and it freezes really well.

                          Just a British question here - when you call something a 'biscuit' does this mean it is like a bread roll or more like a cookie? Over here a biscuit is usually sort of crunchy not soft.

                              I got this recipe from Kerriann on this site(ADBB). She says that Bob's Redmill Almond Flour works best:

                              *Kerriann’s Almond Flour Pancakes

                              1 tsp cooking oil
                              1 pkt splenda
