    Okay, I need technical knowledge here. I have no experience with anything except soy flour. However, I do own 3 lbs of almond flour that I haven't used at all yet!

    Are almond flour and coconut flour interchangeable? Could I make these biscuits using almond flour instead? And if so, would it be the same amount of flour?

    Thank you in advance for educating me!! I appreciate it!

      Almond and coco flour are not interchangeable. Coco flour absorbs a LOT of liquid so the liquid amount would be off (too much).

      There are a ton of almond flour recipes out there though...more than coco flour ones. I'm sure there are almond flour biscuit (buns for our friends overseas ) recipes out there like these Fluffy Biscuits from Linda Sue.

        Thank you so much, that is really kind of you to post this!

        Since I have a dairy allergy...do you think I would have to replace the sour cream with something else or would it be okay without a replacement?

          You could try without it...or maybe a bit more oil (or butter, if you can have it). What is the worst that can happen?

          I do find that these are extremely delicate (they fall apart if I just look at them) but they taste good

            US pancake = UK/Scottish drop scone (a flatter version of it.)

                  Megs - you beat me to the quotation though I thought it was George Bernard Shaw who said it first.
                  Wondering how to get 'most' of your net carbs from your induction veggies?

                    Hi Julie,

                    That's exactly what I was thinking...maybe add a bit more oil and give it a shot...no harm in trying when I get to that rung. I'm still very careful when it comes to nuts...at this point of time (well when I tried them last my throat didn't close up like it has in times past but I did get some bumps and my stomach was quite heavy feeling but otherwise so far so good...so who knows...maybe I'll be ok with them...we'll see). When I'm at the point I am ready to go to that rung I'll give it a shot or to be safe I just might use coconut flour.

                    They sound sooooooo good!

                      I made Linda Sue's Cheese Biscuits (scones ) and they were FABULOUS!!!

                      This is what they looked like when they came out of the oven:



                      I used Bob's Red Mill coconut flour and was a little nervous when I opened it up as it smells like coconut and I wasn't aiming for tropical biscuits with my soup. Anyways, I think Linda Sue's variation on the original Fife recipe is what does the trick to make them savory. The garlic powder and 1 c. (4 oz.) of shredded sharp cheddar did the trick. I also used salted butter.

                      This was my first bread type thing since last July. OMG, it was soooooooooo good. That kind of scared me though as I envisioned eating all of them. Not to worry. I think the high fiber of the coconut flour makes them very filling.

                      I had my cheese biscuit with some unsalted butter on it and it went oh so well with the escarole soup I made yesterday. Curious to see how they taste tomorrow but so far, I definitely plan on making them again.

                      I'm going to work on making a sweet version of this as I think the texture would be great for strawberry shortcake. Summer is coming. Right????

                          I also made the cheese biscuits last week. They were fantastic. I was worried for a sec that I would have portion control issues but there are still a few left in the freezer. I added a bit more garlic and cheese based on one of Linda Sue's comments at the bottom.

                          Interesting Mizski, I was just thinking about altering the recipe to make it work for strawberry shortcake.

                          Earlier in the week I also made pancakes with the coconut flour. They were quite tasty and not as delicate as the almond flour pancakes. There is a hint of coconut taste in them though for those who don't care for that flavor.

                            Glad you liked them. They freeze very well too. With leftover biscuits, I pop them in the toaster at a light setting and they taste fresh-baked again.

                            Using Fife's drop biscuit recipe as a starting point, I made coconut flour blueberry scones with LC lemon curd for Valentine's Day breakfast. This was excellent!

                                I'm not sure when I am going to make these again so forget about the pictures for now; here are the recipes for the blueberry scones and lemon curd.


                                Coconut Flour Blueberry Scones

                                4 eggs
                                1/4 cup butter, melted
                                1/8 teaspoon almond extract
                                1/4 cup Splenda
                                1/4 teaspoon salt
                                1/3 cup sifted coconut flour
                                1/4 teaspoon baking powder
                                1/2 cup blueberries

                                Blend together eggs, butter, almond extract, Splenda, and salt. Combine coconut flour with baking powder and whisk into batter until there are no lumps remaining. Fold in blueberries. If using frozen blueberries, fold into batter frozen (do not thaw). Drop batter by the spoonful onto greased cookie sheet or muffin top pan. Bake at 400 degrees F (205 C) for 14 to 15 minutes.

                                Makes 6 scones

                                Calories 149, Fat 12g, Protein 5g, Total Carb 8g, Fiber 3g, NET CARB 5g

                                Peggy's Lemon Curd

                                INGREDIENTS:

                                3 eggs, whisked well
                                1 T. liquid Splenda (or 1 c. granular)
                                ½ c. fresh lemon juice
                                1 T. lemon peel, grated
                                ¼ c. unsalted butter

                                DIRECTIONS:

                                In a saucepan, whisk eggs, add sweetener, lemon juice and peel. Turn fire to medium-low and add butter. Cook, stirring constantly for about 10-15 minutes until thickened. Pour into jar and chill/store in refrigerator.

                                NUTRITIONAL INFO: Makes about 20 T. or ten 2T. servings, each serving contains:

                                5.453 calories
                                4.6 g fat
                                1.56 g carbs
                                .41 g fiber
                                1.15 g NET CARBS
                                2.13 g protein
                                23 mg. sodium
